Had bacon, egg and cheese on gluten free pancakes as a sandwich. I like breakfast lunches sometimes. Brunch.

Not long finished off my Saturday night staple. Good old fresh cooked fish and chips with mushy peas. Followed by fresh cut Spanish melon cubes drizzled with natural Greek yogurt. Now settled with a nice cuppa.

For lunch I had PB&J with potato chips and for dinner I will have sweet sausage and flavorful rice ( spices, herbs and veggies)

This afternoon I made Cullen Skink, a soup made with smoked haddock, potatoes and onions. Cullen is a small town on the Moray Firth coast. I stayed there for a number of years when I was young.

So, dinner on a cold winter’s night is Chicken Korma on a bed of wholewheat linguine

INGREDIENTS
For the chicken marinade:
28 oz (800g) boneless and skinless chicken thighs or breasts cut into bite-sized pieces
1/2 cup plain yogurt
1 1/2 tablespoons minced garlic
1 tablespoon minced ginger (or finely grated)
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon red chili powder
1 teaspoon of salt
