2 Tsps baking powder
2 Tbls milk
2 oz chopped walnuts

  1. Sift flour and baking powder together
    2.cream margarine and sugar
  2. beat eggs
  3. fold in eggs with a little flour
  4. fold in rest of flour with milk and bananas
  5. Stir in mixed fruit
  6. Add walnuts to mixture and stir.

Pour/scrape ingredients into a 2 lb loaf tin (greased and lined) place in a hot oven (180 C ) Cook for approx 60 mins - loaf is cooked through when a knife inserted into the middle of it is removed ‘clean’.
