What are you having for lunch/dinner? (Part 1)

Oh it’s not a recipe Marian. Any fat free yoghurt you can use like Mullers, Aldi’s, M&S etc. I like to freeze them because it’s like having an ice-cream and it takes ages to get through it.

Oh didn’t know you could do that, thanks

Nor did I Marian, but I’ve been doing it for a year now and nothing has happened to me.

Would like a recipe for an omelette please. That is one thing I’ve never cooked and have no idea how to make. Gordon used to make brilliant ones, but I’ve no clue so, a step by step recipe would be much appreciated.

Molly you’ve never cooked an omelette! I had one tonight for my dinner, and put some cheese in it. I’ll let somebody else tell you how to do it as I’ve probably done it all wrong

I know you can buy frozen yogurt but I’d assumed it was different from the normal yogurt. I am going to give it a try then

Mollie - the way I make mine is:-

3/4 eggs, a dash of milk, salt & pepper (optional) Edit: for just one person, I would use 2 eggs.

Beat together. I use that Flora Cuisine, but you can use butter, heat in a fry pan. Pour in egg mixture and I give it a little poke around with a spatula, so that there is no runny egg left. Then I pop the fry pan under a pre-heated grill until it sets nicely on top. But you don’t have to use the grill, you can double over the omelette in the fry pan.

Hope this helps.

Am being entertained by my Sister and B-i-l today so have no idea what is on the menu - YET!!!

Now that is my kind of omlette, with a little ham of course.

Today it will be pork shoulder cooked in the slow cooker with sauted green beans. We might have blackcurrant jello and cream for dessert.

Roast turkey ,roast spuds ,carrots and swede ,sprouts ,gravy and stuffing .
Followed by Christmas pudding and custard .
I`ve got some crackers somewhere might just produce those for a bit of a laugh .

I won a few quid yesterday (my mum bought me a bingo book) …so its gonna be a treat for lunch today…not pork , not Beef, not lamb it going to be a LIQUID lunch …

Congratulations on your win  Your liquid lunch would be wasted on me as I don’t drink alcohol but I’m sure you will enjoy it.

We had pasta bake for our lunch with a bit of cheese on top, accompanied by veg, very nice.

liquid lunch went down fine …for dinner …roast chicken Yorkshires and veg

Ground beef, noodle, brocolli, tomato, ricotta cheese baked ‘thingie’. I found a recipe for lasagna but don’t want to buy the noodles just for it, so I subsituting ‘penne’ instead as its in the cupboard. Hope it all works, but I’m sure it don’t really matter, or does it?

Sounds great ClaireMarie, and no, I don’t think it matters, pasta is pasta is pasta…

We had tuna and sweetcorn mayonaisse with jacket spud and salad leaves, followed by rhubarb yoghurt for sweet…

The rest of the household wanted Kentucky Fried Chicken tonigh, and I gave in and ate some instead of cooking a healthier meal for myself. Now I’m finishing off a pot of green tea.

Had full ‘Sunday’ roast at my Sister’s place yesterday. Today I still have some beef left from last Sunday’s roast, so will chop it up and make a beef stew 'n suet dumplings.

Lunch = a small wholemeal roll with smoked trout and cream cheese,

Dinner = a small cottage pie /buttered green cabbage/carrots.

Chicken Salad today with a baked potato

fresh fruit salad and cream for afters

Fresh pasta with prawns and sauce followed by frozen yoghurt and choc/orange cereal bar
