What are you having for lunch/dinner? (Part 1)

Last night was a scotch pie, with carrot, a corn cob, and fried potato and onion, with gravy.

Tonight will finish up the crispy potato slices (with grated cheese speinkled over) and the second chicken kiev.

Just had a tomato and basil salad made with local vine tomatoes,
… tagliatelli with spinach and ricotta a new recipe I was trying and it was lovely :slight_smile: It enabled me to eat half a bag of spinach not one of my favourite vegetable.
I only made a small portion.

Chicken Salad.

Mango spice Chicken slices with new potatoes, lettuce, cucumber, cherry toms. cous cous, couslaw, potato salad.

Todays its:

Smoked Haddock, new potatoes, peas & carrots.

Have already prepped today’s main meal, and unsure whether to do lunch time, or evening. Sausages are defrosting, potato has been peeled, and onions chopped.

Guess what I’m having, lol??

I didn’t enjoy today’s lunch :frowning: … crispy spring rolls (cooked in the oven not fried in oil) with a homemade hot chilli dipping sauce.
I decided to add some spinach left over from yesterday’s pasta dish to the mixture of vegetables inside the rolls and it didn’t work.

I ate the rolls just the same thinking how much goodness there was in the mixture of 6 vegetables they contained .:mrgreen:

Roll on teatime, homemade bread roll with egg and cress.

That sounds healthy Swim!:slight_smile: I like the idea of something wrapped in cabbage leaves,but what kind of cabbage do you use ,as I always find it difficult to seal the the package?

The neighbours had Pizza yesterday, I know because I saw the home delivery guy on his moped arrive, so we are having a Sainburys made up Pizza today, its a long time since we had one so we are being a bit devilish,

Hot Pepperami is my favourite so that’s what we’re having tonight.

Lunch = Homemade Crab terrine with melba toast. Followed by fresh fruit salad.

Dinner = chicken breast in cream/cider sauce, with baby potatoes, carrots and leeks.

mm Crab Terrine sounds nice ST.

It was delicious! It is easy to make and, apart from wilting the watercress, it does not need cooking. I tend to use more crab than salmon in the middle bit. I made mine yesterday and left it in the 'fridge overnight.

Ingredients

250g fresh white crab meat  
450g smoked salmon slices
1tbsp olive oil
140g watercress, stems removed, plus extra to serve
600g cream cheese
Zest 1 lemon, plus wedges to serve
2tbsp finely chopped fresh dill

Method

Line a 20cm x 10cm loaf tin with cling film, laying it in as smoothly as possible and letting the excess hang over the sides. Cover the base, ends and the sides of the tin with 325g of the smoked salmon slices, slightly overlapping them. Again, allow the ends of the pieces to overhang so that they can be folded over the finished terrine. Chop the remaining smoked salmon finely and set aside.

Put the olive oil (or butter) in a large frying pan and add the watercress, allowing it to wilt down over a medium heat for 1 minute. Let it cool, then squeeze out the excess water in a clean tea towel and chop finely.

Divide the cream cheese between two medium-sized mixing bowls. Add the watercress to one half and season. Add the crab meat, chopped smoked salmon, lemon zest, dill and plenty of black pepper to the other bowl of plain cream cheese and fold together, trying not to break up the salmon too much.

Spoon half the crab mixture into the lined loaf tin, smoothing the top with a spatula. Top with all of the watercress mixture, again smoothing the top. Finish with the remaining crab mixture and smooth the top.

Fold the overhanging smoked salmon slices over the top to seal the terrine completely. Then cover the terrine with the overhanging ends of cling film. Weigh it down with a couple of tins or similarly heavy objects and chill in the fridge for at least 5 hours (preferably overnight). Slice and serve with watercress and lemon wedges.

That sounds really nice ST, but I should imagine quite expensive buying fresh Crab and Smoked Salmon.

Sounds delicious - I’ll be having a club sandwich for lunch and good old bangers and mash for dinner with peas, sweet corn, and onion/mushroom gravy.

Off down the ‘pie shop’ later on to get a couple of delicious pies - one full of meat, t’other full of cherries and custard!!!

Homemade tagliatelle carbonara - followed by fresh fruit salad.

Have defrosted some chicken drums and sausages, so will do a roast, with sausagemeat and stuffing. Still have unopened pineapple and evap milk for afters.

Yesterday was lamb shank, mashed potato, carrot and peas, and have some lamb left. Can do another meal with it tomorrow.
