What are you having for lunch/dinner? (Part 1)

I am still not allowed to lift or bend too much so meals are cooked together which is really good fun. Tonight we heated up some really nice pies, cooked some corn on the cob and hubs made his first ever pot of mashed potato which was sublime. I have said that he is the mashed potato chef in the house from now onl.

I’ve just taken out three mini chicken breasts for tomorrow, but I’ve not decided what to do with them yet.

I might bake some pies tomorrow, but it depends what mood I’m in. :smiley:

Mollie darlin’ - chop chicken breasts into bite sized pieces, chop an onion and several cloves of garlic and throw them into a wok or large frying pan with some oil. When the onion starts to soften, add the chicken pieces and fry until chicken is cooked through. Add 1/2 - 3/4 pt stock and allow to boil. Add a handful of saltanas, some mixed (frozen) peppers, and some (frozen) peas. As stock begins to boil, add a1 Tblsp Branston Pickle,and some cocoanut cream to thicken it and then start to add the spices: Cumin, Garam Masala, Curry powder, & coriander. Turn down heat and allow to simmer.

In a separate saucepan pour 1 Pt water, add some sea salt and bring to boil. Add a mugful of long-grain rice. As rice begins to boil, turn down heat to prevent it boiling over and add 1 Tsp Turmeric. Allow rice to boil off the water. When that has happened, remove from heat and rinse and strain under hot water tap. Serve on plate and add curried chicken.

I got onto the old chicken breast thing when I was on my own for a while. I used to sweat some onion add the chicken either cut up or whole and cook for five mins then add a large dollop or two of cream cheese allow this to melt and thicken and then add some frozen spinach which you have cooked in the microwave and squeezed out all the moisture. This is really nice you can add different coloured peppers, and serve it with rice, baked tatoes or just in a bowl with some bread.

Got my parents over for dinner today, we are having tomato soup for starters, roast chicken, sausage stuffing etc etc

no pudding unless mum brings one of her yummy cakes, fingers crossed :mrgreen:

It is cold today so I think I will make a chicken stew.

Some good ideas there but Uncle Joe, I’m so sorry, but I don’t like sultanas, Branston pickle or coconut cream. I have all the spices you mention, so I could make a chicken curry, but I had curry last night. :smiley:

No, I think I’m going to do a couple of roasted spuds, sprouts, sweetcorn, cabbage and gravy. :slight_smile:

One of my usual Sunday meals: broiled rainbow trout, fresh spinach, potatoes rissoile, roll; chocolate mousse cake for dessert.

Kitty darlin’ - we’ll have to change that - just follow some of the recipes I have posted on here, for instance the chocolate sponge with rum and coffee butter cream icing.

Now that sounds just devine Uncle Joe, I do believe I copied one of cakes recipes the other day, which I will try out at some point :mrgreen:

The parent have just arrived and my mum have brought me her famous date and walnut cake for after’s so I am a happy bunny :mrgreen:

Leek and potato pie with a crispy cheese topping, grilled dry cure bacon and my own runner beans from the freezer :-).

Pork loin chops, apple sauce, baby potatoes (for hubby only), roast parsnip chunks, sprouts and carrots.
No dessert.
