During shopping trip on Monday I grabbed some reduced leeks, a small container of tiny diced veg known as a mirepoix and used to start off a soup (50p bargain), and some reduced diced chicken breast at £1 for 470 gms. So finely sliced half of one of the bigger leeks, (it was huge beleive me half was plenty) and sweated it, in oil/butter, added the mirepoix, then some of Tescos really cheap frozen mixed veg, deglazed with half a pint of water and one veggie and one chicken knorr cube, and once it had come to the boil, turned down to a low simmer and added about a quarter of the chicken cut into really small dice about the same size as the frozen carrots in the veg mix. Later added pearl barley and lentils, more water and then seasoned to taste. Result a huge litre container of soup for son to take to work, and the remainder of the chicken was used in a chinese chicken curry from a mix later last night.
Tonight? have no idea. Although at the moment fancy a bacon sarnie.
Went down to the Co-op late today for my paper, just after 3, and found a huge pack of southern fried chicken pieces reduced to £2.25. Grabbed that! So for supper it was 2 pieces, with home made chips, a few onion rings and bbq sauce. And a few hot sausage rolls afterwards.
Will save the other pieces and can have a few tomorrow night and will freeze a couple. Yes, there was that much in the pack. Bargain.
Just toast for lunch. Was busy looking for something which is why I went out late.
Was at ‘vampire’ clinic this morning, when I came out, ‘popped’ next door into the Co-op and saw a nice piece of beef, so will have roast beef and all the trimmings for Sunday lunch.
‘Popped’ down the road this morning to the pie shop - now have my piglet (Pork & Apple) pie for lunch today - am having trouble resisting the temptation to scoff it now instead of waiting for lunchtime.
Yesterday’s evening meal was Pate for starters followed by Hake in a creamy parsley sauce with chips, shredded cabbage and carrots and lemon cream crunch for dessert. Washed down with wine. All very nice too.
Lunch today was the last of home made soup. Evening meal will be home made lasagne and garlic bread.
Was this the famous eel pie, mash and liquor? I love parsley sauce made with milk and served with boiled ham maybe, or fish, but have always thought that the water based ‘liquor’ looks thin and quite unpalatable. But then we all have different tastes and dislikes which is good.
Last night we had spag.bol. Using some well reduced diced beef I put through new mincer on finest holes, and a couple of those single clove garlics and some of the frozen toms from freezer. Tomorrow (or later today to be truly honest) we will be having a huge pork shoulder joint that I bought reduced to fiver from original price of fifteen quid last week. It is sitting, double wrapped in foil waiting for son to place on bottom shelf of oven on gas 1, before he goes to work where it will stay until well after 5pm. Debating on roasties or mash to go with the sprouts, cauli, carrots and French beans and stuffing and apple sauce.
Am also thinking of making a Victoria sponge using the all in one recipe have used for decades, or scones? Just fancy some home made goodies.
I have a Gammon joint cooking at the moment, so I will be having that today as a roast dinner, then I will slice it up into 3 portions and freeze them.
Certainly not eel pie! Minced beef, with the parsley liquor. Very popular and often queues out the door. Our Manzies pie n mash shop has been given Listed status. Or Heritage, can’t remember which, but the shop inside is unique and beautiful.
Just been preparing evening meal (crumpets with cheese for lunch, after Sainsburys shop). Will be having:
Roast pork slices with fresh apple sauce
Roasted: potatoes, sweet potatoes and parsnips
Carrot, broc & peas (or maybe with sweetcorn)
Stuffing, sausage meat and a mixture of both
Yorkies and gravy
Quite probably a warmed up custard tart for afters
