Turkey breast with potatoes, carrots, peas and gravy followed by a mince pie.
Cheese crumpets again for lunch, and tonight I’d better have some more spag bol. I apparently made enough for 4 portions, as I’d shared it into two polythene containers, froze one, and there is enough for another meal. I also have the remnants of last night’s pork dinner, all chucked into a foil container. I’d cooked too much (eyes bigger than belly last night) so have some left over. Might wait till tomorrow now and just put it into the oven to warm up, for lunch.
Today we are having Chicken Penicilian.
Tonight I don’t know yet.
The remains of the beef stew from yesterday to which I will add some more veg and a few more suet dumplings. Stew is always better on the second day!!!
I thought at first this was a new Italian dish, a sort of variation on Chicken Sicilian then it hit me, you mean Penicillian, as in chicken soup yeah??
I love toasted cheese on toasted crumpets, especially with the sweet pickle Lidle sells, but for me it has always been a supper dish. Sunday we had that huge pork joint I mentioned, even after removing all the fat and the skin (to re-roast as cracklin) there was still a huge chunk of meat left. So I had made sure to cook plenty of veg, was crafty when I par cooked the spuds for roasting and included several smaller pieces which would then cook through, piled in the kale and the broccoli, and we went with smashed carrots/swede combo and what was left of the leek. So after an extremely hearty roast dinner Sunday, I made up a dinner for son to take to work later in the week, and the rest was mashed together and we had bubble and squeak with cold roast last night. And there was still more than enough for some sandwiches for supper and a couple for my lunch. Not bad for under a fiver huh?
Made burgers for meat eater and had a huge mushroom stuffed with garlic and cheese myself.
Sorry Daisymay, yes I do mean Chicken Penicillian.
Chicken Curry today.
Boring today: a frozen £1 chicken supreme.
We are having Gammon, roast dinner today.
Sausages today, have niece and her daughter coming to lunch so will do some chips with them for them. Got some ice cream for their pudding too.
Two home made loaves are just baking in the oven. Made them using olive oil instead of fat, so a little healthier.
I will have a slice with soup for lunch and probably a nice
sandwich later.
The bread turned out nicely using the olive oil.
Mmmm … they look mouthwatering, Mall ![]()
Thanks Mags. It did taste very nice.
Out today, back to Romford getting a refund (by free travel) so took out a homemade sausage sandwich and a flask for coffee for lunch.
Bought some French fries when I got off the bus near home and in a short while will do bacon, eggs and beans to have with the fries (which will obviously need reheating).
Don’t know what I’ll be eating today. Am being collected by my Sister & B-i-L for a ride out in the country somewhere.
We are having Sausage Stew today, its already prepared.
Forgot to get anything out of the freezer so going to have a rummage now and see what will defrost quickest !
We froze some chicken tikka (his) and chicken korma (mine) a while ago, so that’s for lunch … with some sun dried tomato flatbread that hubby is making, yum yum.
Hubby is making a bloomer too - he likes the look of yours Mall
(he said what a lovely pair you have turned out
)
