What are you having for lunch/dinner? (Part 1)

Was a little off colour yesterday so lunch was pkt chicken noodle soup (luv to drink the broth then eat all the noodles last), and dinner was scrambled eggs and toast, oh and put a rice pudding with sultanas in to cook slowly and had a small dish at supper time.

However before going to bed I remembered to take a blade half of lamb shoulder from freezer for today and at around 7.30 am I woke up for bathroom call, remembered the lamb, and double wrapping it, put it in the bottom of the oven on gas 1. Around 4pm the smell was amazing! We are therefore having the lamb with creamed tatties, runner beans, broccoli, and cauliflower, maybe even some carrots. Probably have the remainder of the rice, cold, for pud.

Have to tell you all this, yesterday son was invited to steak, booze and gaming night at his old work mates, so he decided to contribute, he bought some dolcelatte and some single cream to make them his favourite blue cheese dressing.

Those cheap pizzas are pretty good aren’t they if you add a few bits to juzz them up, I like adding some mushrooms and a bit more cheese.

They certainly are Julie, especially when I’m on a strict budget. I’ve always got puree and cheese in the fridge anyway.

I like the little single pizzas as well on occasion, and I add mushrooms, prawns, chopped chillies and onions and it make a most tastyful meal. :wink:

Roast dinner today of Gammon, potatoes and vegs.

Chicken breast removed from freezer - is now quietly defrosting - will make either a chinese meal with stir fry veg or an indian curry - depends on what I fancy when I get out into the kitchen later today.

Left overs of the lasagne I made yesterday today. Also cooking a couple of meals to put in the freezer for meat eater in case I don’t feel like cooking for a couple of days. Although he is perfectly capable of cooking himself I just know he will fill up with rubbish unless I make sure he has something he can just heat up.

You have heard the expression “best laid plans” etc.? Well yesterday would come under that heading. Earlier in the day son had phoned to remind me (make that tell me cos he had certainly not mentioned it before). That there was an hour long seminar being held in store by a certain antivirus manufacturer, and that he would thus be an hour later.

So I had just peeled spuds and prepared veg when in he walks with two huge 24" pizza and a box of a dozen hot wings. Apparently said company had organised £500 of pizza and wings for the staff who had remained after work, and these were some of the leftovers. And very tasty they were, one thin crust spivey veggie one with spin ache, onions and cherry toms. And one thick crust meat feast with just about everything. So the lamb is tonight. Have to say we had a small sandwich each last night and it simply melted in the mouth.

We are having Lamb Casserole today, and a sandwich tonight.

I too got seriously side-tracked yesterday, so much so, I wasn’t able to eat at all (after breakfast) for the rest of the day. Making up for lost time today though - had ‘good’ breakfast and utilised the defrosted chicken breast in a stir fry. Since I’ve temporarily run out of bread, will make some pancakes for my ‘tea’ this evening.

We have just had Fish Fingers, Mash and Beans.

Lunch was home made mushroom soup and fresh blueberries with a little fromage frais. This evening’s meal will be a ham salad with a small jacket potato and some fresh fruit to follow.

Am making my own Piri Piri Chicken today with roast potatoes, parsnips, onion, swede and carrots.

I really enjoyed my lunch today.

I meant to make the mushroom soup today but as I’d been out for quite awhile bought a cheese topped baton in Sainsbury’s and wolfed down some slices with butter and cheese, while waiting for kettle to boil! There is half left and sitting here in lounge can still smell it. My kitchen is off the lounge, just a couple of feet away. No privacy, chhhh!

Tonight will probably get a chicken pie out of the freezer, and do some veg. For afters maybe pineapple and cream.

Must go off and move that cheese baton to somewhere else. The smell is driving me wiiiiiiiildd!!!

Today we are having Chicken Breasts wrapped in bacon and cheese, roast potatoes and vegs.

Tonight Blackberry and Apple Crumble with custard.

Making a cheesy leek soup today managed to get 3 packs of 3 trimmed leeks yesterday evening for 20p so leeks will feature heavily over the next few days. :smiley:

Another 8pm finish for son, so dinner for me is whatever I can scrounge up. Actually come to think of it I bought some reduced cod fish cakes the other day so may have those with some bread and butter.

Just had homemade Chicken Curry and Rice.
