I think I have mentioned in the past that one of my favourite tv programmes is an American series known as triple D, where the presenter, a chef and restaurateur in his own right travels the country visiting independent food outlets that viewers recommend. Well in this programme quite a few of these places have their own burger recipes, and they always look huge, juicy and extremely tasty. It is therefore quite fortunate that this programme is on late at night or despite the fact that I am not a burger fan, I may be tempted to go and buy one. Anyway, I have also said about the fantastic electric mincer I purchased from Amazon a few months ago. And here the two ‘subjects’ come together.
I had defrosted a couple of sirloin steaks purchased mucho reduced some months ago and we were going to have them for dinner yesterday. But they turned out to be quite small. Enter my son, and the mincer. He minced each steak, along with a small onion, using the medium holed disk, and he added some chilli flakes to his own portion. He then formed the mince into a patty, covered with cling film and placed in 'fridge for an hour. Later he cooked them on the ridged griddle pan.
All I can say is WOW. He had taken note of two of Guy’s (the programme presenter) mantras, first, handle the mince/patty as little as possible, and second, never ever press on the burger once it is on the grill. Result? The most amazing tender,light, juicy and delicious burger I have ever tasted. It melted in the mouth leaving just the taste of best steak. So when I say that yesterday we had burger and chips with salad, take it from me, this was no ordinary bog standard burger!!!
Yes I make my own hamburgers too, the same way. Never buy a hamburger in this house they are always home made. Don’t take long to make and are delicious. Son loves his on a bun with hamburger,bacon,fried egg,lettuce,tomato, cucumber. fried onion and pickles. Chips or wedges on the side. I sometimes put a slice of cheese on top of the meat and grill till soft as well.
Cumberland pie in the oven with cheese round the edges, and peas.
Went shopping today and ready meals were a 1/3d off so I bought a few. One now cooking.
Had some fresh prawns in freezer and a much reduced jar of chilli/tomato sauce for pasta, so thats dinner sorted. May chuck a rice pud in oven also.
My mouth is watering at the home made burgers!!

Do you mean hamburgers, or beefburgers? I prefer hamburgers to beefburgers which are made from pork and bacon, not beef, hence the word HAM in the product as they’re not HAMburgers if they’re made from beef. ![]()
Please give your recipe for hamburgers in the Recipes Section, although I’ve a pretty good idea how to make them, but would love to know your method. ![]()
Today I am cooking Chinese Sweet ‘n’ Sour Chicken and Singapore Noodles.
If I don’t move myself I won’t be having anything. Boil ham shank, afterwards stud with cloves and cover in mustard and roast it off, have with white grain mustard sauce, baked spud, sweetcorn and peas. Pea soup made with stock in slow cooker overnight on 1/2 heat served with chunks of ham in and crusty bread.
Reduced sugar/salt Baked beans on toast for me, meat eater has sausages and chips
Chicken curry and rice for us tonight.

Cider braised spare ribs of pork tonight.
I’ve left it a bit late to cook a big meal so I will be using one of my ready made ones and most probably the duck/pancakes/hoisin sauce. Yummy but messy. Certainly won’t be eating with one hand and typing with the other! Hoisin sauce everywhere!!!

Sorry Mollie, hate to contradict you but the name Hamburger comes from the belief that these originated in the city of Hamburg, and has nothing to do with their meat content. Try googling something along the lines of “why is it a Hamburger if it doesn’t have ham”. Names like chicken burger and turkey burger et.al. Are later adaptations.
Monday night, number one son (bows in acknowledgement to Charlie Chan) remembered to tell me that he would be going to a games tournament on Tuesday and therefore would not be home until late. Knowing that at these things they all seem to subsist on an endless diet of crisps and junk, I told him that if I woke in time I would make him some corned beef pasties to take with. Trouble was my subconscious would not then allow me to sleep! I must have sleep “surfed” all ruddy night! And in the end gave up and made them. Have to say they were quite scrummy, but the joke (whether on him or me am not sure)was that in his last minute rush to get off, he forgot to take any!
