Marrow, spring greens and a quorn burger for me, meat eater is having a chicken breast with broccoli and spring greens.
Yesterday bought a reduced ‘Chicken, leek and bacon lattice pie’ for 89p at co-op, bargain or what, heated it up and had it with home made chips and a carton of curry sauce son picked up from chippy on his way home.
Tonight is going to be a foraging night for me, he is going to a mates for a boys watching rugby night, and cannot be bothered to cook for myself. But will make up for it tomorrow as have a nice loin of pork (part of a half price one from Tesco I froze a few weeks ago) have plenty of fresh veggies, and trying to decide between Jersey Royals, or crispy roasters, hmm? Have fresh strawberries (again reduced - anyone seeing a pattern here) and a reduced pineapple in the 'fridge also some Elmlea and a New York Vanilla cheesecake, so there are several options for afters.

DM if you have a slow cooker - place pork in slow cooker - pour over Cider (approx 3/4 Pt - depending on size of slow cooker) and switch on - leave for some hours (best done overnight) - I promise it will taste fabulous!!!
Roast dinner this evening - leg of lamb, roasties and various veggies.
Stella darlin’ - make a marinade to cook the lamb in: 1/2 Pt orange juice, 3 Tblsp Apricot Jam, 3 Tblsp Soy sauce, 5 - 6 cloves of garlic (peeled and crushed), 2 Tsp dried Rosemary.
Leave lamb as long as possible in marinade, when ready to cook, remove lamb from Marinade and dry roast for approx 35 - 45 mins, Remove from oven, drain excess fat from lamb, pour marinade obver lamb and return to oven. Baste lamb at regular intervals until cooked through. Bon Appetite!!!
Uncle Joe, why is it that you seem to feel it necessary to advise people on how to cook their meals? I for one have been cooking for family and friends for almost 50 years, I have a huge selection of cookery books (love to read them) and have been known to watch some of the programmes on the Food and Drink channel, so I have a fair idea how to cook various things. And I most certainly would not ruin a decent loin of pork by stewing it for hours in a ‘slo-cooker’. I have one yes, and used it often when I worked, to cook a casserole which would be ready when I got home.
So today will be roasting the joint, uncovered, for approx 40 mins, and this will result in a beautiful, tender and tasty piece of meat. The meat juices, along with the veggie water, will create a delicious tasty gravy. Job done!
I know I have once or twice made a suggestion on here, but not every flippin time someone mentions something they are about to cook. Wind it in a bit hey?
Doing a small pork loin steak for meat eater with rest of spring greens from yesterday and cauliflower, having cauliflower, spring greens and broccoli myself. One of my nephews is popping in this evening too so will make him a sausage sandwich he is thin as a rake so can risk the calories LOL

I think Uncle Joe has always considered himself as our resident gourmet he has been advising us on different cooking ideas for a long time. If you don’t wish to try his ideas then you just ignore them. It is a simple pleasure that Uncle Joe has and helps him to feel as if he is a valuable member of this forum which he is.
Has anyone tried making Lasagna using Pork Mince instead of Beef? Does it taste alright.

Trouble is not everyone wants unlimited calories, alcohol etc and are just happy with how and what they cook. Possibly best if I don’t post my meals I guess.
Most forum I use have threads like this unless someone requests a critique they just get a simple yum or comment like that. Just what I am used to really.
Please post your meals if that is what you like to do. Unlike some forums I think the OFFF rather like to go off subject and this is allowed unless a full out argument takes place. Uncle Joe is not a critic of your meals but he simply comments on them as you would in normal conversation when discussing what you are eating, surely that makes this thread more interesting than just a list of menus.
Today we are having Lamb Casserole with loads of vegetables cooked with it.
Tonight we are having Chicken Kiev, Potatoes & Courgette Bake.
