What are you having for lunch/dinner? (Part 1)

Today I am cooking a whole bird, so it’s Roast Chicken today.

Lovely SJ. It’s amazing how many meals it’s possible to get from a whole one. I sometimes buy a half/whole cooked in Morrisons and get a few meals, or freeze a bit. Handy for when I fancy chicken in a Chinese sauce with rice/noodles: just chuck into the frying pan.

Getting expensive aren’t they? However, I managed to buy a pack of basic drums and thighs for £1.50 last week and froze some.

Today, for lunch probably corned beef sandwich. Supper: egg, bacon, sausage and beans. (Using up stuff)

Still in fridge: shredded duck, hoi sin sauce and pancakes (Morrisons), tomorrow’s meal maybe.

Leeks, marrow and vegetarian burgers for me, homemade lamb burgers for meat eater.

Hi Janet,

Yes I got 4 meals out of my Chicken, so 3 of them are in the freezer.
I buy Chicken drumsticks and thighs from Aldi they are quite nice and meaty.

Hi Julie,

I wouldn’t mind the recipe for Lamb burgers please.

Susie J xx

Mine are very plain just minced lamb, mint or rosemary (depending on time of year), finely chopped onion and an egg to bind. Just mix it all together and form into burgers/patties and leave covered in the fridge for a couple of hours. Then I fry them in a non stick frying pan very slowly to start with no oil. They produce enough fat themselves I find.

Quantities vary rather as it’s a bit of a chuck it in and see how it comes out recipe.

Thanks for the recipe Julie.

We are having Egg Salad today for lunch.

Trying this recipe today http://allrecipes.co.uk/recipe/5665/baked-stuffed-marrow.aspx

my son and I love marrow. I usually cut it into slices about 1.5 - 2 inches, remove seeds etc and steam for a few minutes, place in baking dish, fill the hollows with a fried mince/onion mixture and then cover with a thick cheese sauce with slices of cheese and beef tomato on top and bake in medium oven for about 20 mins - half hour until cheese melts and heated well through. Serve with tinned chopped tomatoes.

Julie that looks good. What I do. I cut marrow into big chunks and fry them until soft, then add Curry Powder, garlic, chilli to it.

Tonight we are having Steak & Kidney Pudding (Uncle Joes favourite) with potatoes and veg.

Ever made ‘Marrow’ whisky DM??? - fabulous!!!

I beat you to it Susie darlin’ - I had my ‘pud’ on Monday.

Left overs from yesterday which was rather delish if I do say so myself.

No, but had a friend whose father regularly made marrow rum, and boy did it have a kick. (pity there 'aint an emoticon for rat ****d :lol::lol:

I loath kidney, it always seems to taste of what it does to me.

I have just put a lamb hot pot on the bottom of the oven to slow cook for the rest of the day. Smells lush. With runner beans and broc. methinks.

Fending for myself today, so I think lunch will be turkey sausages, simmered with peppers and onions, brown rice, spinach salad.

If you’ve got a nice big marrow, a place to ‘hang it’ and want to try, I’m happy to talk you through the recipe.

I chat to an elderly gent who walks past with his dog most mornings. He told that he had some marrow rum on the go and had it hanging in an old stocking behind the kitchen door. His daughter had arrived for a ‘good clean up’ had found the marrow and not knowing (or asking) what it was just threw it in the green garden waste bin. Poor old chap was devastated.

Oh bloody ‘ell Cate darlin’ - I bet he was very p*ssed off!!! Marrow Whisky (or marrow rum) is fabulous - albeit its very potent and if you’re not used to it, it’ll blow your head off.

We are having spaghetti bolognese tonight.
