There’s one very assured way to tell if I am SERIOUSLY ill, I’ll be ‘off’ my food!!!
We had Breaded Chicken Strips, made a Courgette bake and new potatoes.
Egg on toast today as I am off my food a bit with stress at work - who would have thought a little cleaning job could be so stressful
We had Cod and Chips today for lunch, very nice it was.
Belly pork roasted with onions, parsnips and baked potatoes. Also boiled ham shank then roasted that off and made pea soup with stock lovely. Beats shop bought boiled or roast ham anyday.
Leeks in a low fat cheese sauce, with a baked potato and some boiled mushrooms.
Had steak & Kidney pudding with steamed potato, carrots and parsnips and a drop of gravy.
As its Sunday, full roast again today - chicken, carrots, parsnips, potato and onion and may even have a (shop bought) blackcurrant and apple pie and custard too.
Pork loin steak for meat eater with leeks and courgettes and a quorn steak thingy for me with the leeks and courgettes. Might put a baked potato in for meat eater too if he fancies one.
I am not ashamed to admit that I frequently use packet sauce mixes, but I always ‘tweak’ them. For instance last night I cooked some mafalda corta pasta (what is that? well imagine small flat pieces of pasta, approx 1" in length by about half in width with little wavy edges - actually looks a bit like those fluorescent minuscule sea creatures you sometimes see on t.v.), anyway, first I rendered down some smoked streaky bacon chopped into lardons, then added sliced leek, then some diced chicken thigh meat (much nicer than breast in my opinion), and finally a carbonara mix and 3/4 pt skimmed milk. When the sauce had started to thicken I just added the pasta and thoroughly mixed it. And it was delicioso!
Tonight am again using a mix, something called Somerset Pork and apple, and am serving this with twice cooked potatoes, sweetcorn and broccoli. And as there is half a pineapple in the fridge, and some frozen strawberries in the freezer, am going to make some waffles, defrost the strawberries and mash them, and caramelise the pineapple and serve them with the waffles and some tinned squirty cream. Sounds lush even though I say so myself.
Save me some please DM - be with you sometime tomorrow.
With the bottomless pit that is my son? You don’t stand a chance!
We had Piri Piri Chicken with Roast Potatoes, Parsnips, carrots & swede.
Tonight we are having Bread & Butter Pudding.
Hopefully I will be going into Hospital tomorrow morning at 7.30am, (that’s if they don’t cancel my appointment again). So I might be offline for about 4 days. Susie J xx
I may only be little - (5’5"), but I bet I could give him a run for hios money. There are two members on here (Jean and Hazel) who will verify that statement.
Good luck Susie darlin’ - and come back to us ASAP. Can you let someone else on the forum know how you’re doing so that we can all be up dated on your progress???
Tonight…lamb shank, roast potatoes, sweet potato, parsnip and kholrabi. Leeks and carrots, mint sauce and gravy. Dessert…supermarket pancakes, home cooked apple sauce and double cream.
To drink…elderflower cordial and lemonade. Mmmmmmm…
Good luck and get well soon! x
Thank you for your well wishes Uncle Joe, but unfortuneatly my Husband doesn’t know how to use the computer, but if I go in for Surgery, I should be back home in 4 days time. Susie J xxx
Thank you Janet, for your well wishes.
