I ended up with a chinese type meal. Sliced pork very thinly and marinaded it in some hoy sin sauce. prepared some baby sweetcorn, batons of carrot, spring onions, strips of red and yellow pepper, sliced a small red onion length wise, defrosted some mange tout and rice had in freezer, and beat a couple of eggs. When son arrived home from work, quickly fried meat, removed from pan, added a little more oil and scrambled the egg, then added all the veg and gave it a good stir while it cooked, then added the cooked rice and meat, stirred in a small tin of bean sprouts, some soy sauce and sesame oil and the red onion which I had fried separately to a lovely golden sweetness. Was actually quite delish.
Just a little hint here, ‘egg fried rice’ works better if egg is cooked before adding the rice, remember this from a chinese themed cookery programme I watched years ago.
Omelet thingy here today using up left over veg, potatoes and a little cheese. Very nice it was too !
DM, Cate darlings, if you’re cooking pork in a slow cooker, instead of ‘dry’ cooking it in its own juices, add 1 Pt of dry cider and cook the pork in that - its delicious!!!
Will do UJ, If it is possible I think I allowed the pork to cook too long in the slow cooker probably had about 12 hours.
Had a lovely leg of lamb thanks to half price Asda it was lovely and we have plenty left for today.
Homemade Chicken Curry & Rice today.
Thin strips of beef stir-fried with onion, snow peas and broccoli and some delectable sauce my daughter had on hand. She served it over gluten-free pasta. Even the 2 year old had seconds. 
Vegetarian sausage and 100g of oven chips today, had a bigger breakfast than usual so have to be thrifty with my calories later on.
Have taken pork chop from freezer and later on will casserole it with onion, carrot, parsnip, celeriac and am in two minds whether to use a normal potato or a sweet potato. Will decide when I get the veg out of the bag.

Jan darlin’ - save on the washing up - one pot cooking - chuck all the ingredients in the same casserole dish and shove in the oven to cook together!!!
The roasting of root vegetables is really a glorious taste. At the moment I have carrots roasting in the oven to make my famous Honey roasted carrots with Rosemary chutney. Somehow the roasting brings out all the natural sugars and makes them sticky and crispy.
Aaahhhh - you got me, fair enough roasted root veg is delicious!!!

I do like my parsnips and carrots roasted - besides which, when we got this new kitchen, we had a dishwasher installed (well, hubby can’t stand at the sink for long anymore - I was thinking of him, honestly) ![]()
I like to roast beetroots , eat hot with a tuna steak and spicy tom sauce yum… or leave cool flake off the outta skin and have in salads much nicer flavour than boiled.
Today Im have a spicy tom chicken with mash and peas
I love roast beets too and always roast them before pickling them with orange. However, when I am using them I must eat a ton and between you and me and don’t tell a soul but my wee goes pink:surprised::surprised::surprised::shock::shock::shock:

Had my favourite today. Chicken Penicilian. Tonight we have just finished Bread & Butter Pudding, mmmmmm.
I too am partial to roasted veg, especially a sort of Mediterranean mix, onions, peppers, mushrooms, cherry toms etc, with baby new pots (skins still intact of course) and a few cloves of garlic thrown in. Also like the usual roast pots and parsnips, but for some reason cannot take to roasted carrots. As for today’s dinner, well am preparing a dish saw on Nigella for my son, that is slice up some haloumi, and place on roasting tray with roasted peppers, spicy sausages (choritzo today but there are other types can be used), chunks of red onion, some baby plum toms, then into hot oven for 20 - 30 mins and served with a small tear’n’share loaf of chilli bread from Asda. As for me? maybe some soup or similar, have had a migraine for most of the day and so not really in a food mood.
