Today I had the Mother-in-Law for dinner, so we had Chicken Casserole with potatoes, swede & brussels, dessert we had banana & cold custard.

We had mother in law a while back but I found it a bit tough… ;0))
I have had a home made quiche and salad then rice pudding which I swirled dark chocolate in instead of jam

And it is chicken again!! anyone get the idea that my son has an addiction to chucks? Anyway, taken some boned thighs, stuffed them with soft cheese/herb/garlic spread. wrapped in prosciutto, and roasting, serving with assortment of roasted veg, e.g… charlotte pots, baby plum toms. slices of courgette, teeny tiny mushrooms, red and orange peppers, teeny tiny onions, already smells lush!

Chicken salad today with a baked potato.

Noticed yesterday in Tesco that they sell Nando’s piri piri sauce if that’s any use?

Tonight we are having Lambs Liver, Mash & Peas with fried onions and bacon.

Oh Susie I envy you, I love liver, and it is one of the rare things my son hates so never get to eat it. Try this:- dinner in the time it takes to boil the spuds. Start with partially frozen liver cos it is easier to slice thinly. Put the potatoes on to boil, and the sliced onions to fry slowly on a low heat, then prepare a plate with seasoned flour, thinly, and I mean thinly slice the liver. Right, now spuds are almost ready and the onion is slightly browned, pour some of the potato water onto the onions and raise the heat, (this will hopefully have caused the onion/water mix to brown) keep adding water gradually then, dipping into the flour, layer the liver on top of the onions. By now pots should be done, so drain the rest of the water into the liver/onion mix, mash the potatoes, and by now the liver will be cooked and you will also have a lush onion gravy. If necessary a few drops of gravy browning will enrich the colour if required. The liver will be tender enough to feed to a toothless baby. Do not overcook or it will go like leather though

Hi Daisymay, I do the same only I cook my liver in flour then pour over beef bisto, so that the gravy goes nice and thick, I cook the onions first and leave them in the microwave and once the liver is cooked I put the onions back in the frying pan with the liver to heat up.

Dragon (for the benefit of new members - my Mother - Father’s name was George - hence the diminutive) used to cook Liver and bacon casserole.

Home made lasagne, salad and a bottle of something red.

Roast tonight, Chicken, veg. potatoes etc.

Steak & Kidney (it might be horse steak) Pudding, vegetables and gravy. Will round it off with a cherry lattice pasty and custard.

Chicken Kiev, cubed fried potatoes with leeks, mushrooms & bacon, spinach & peas.

Chocolate Victorian Sponge.

Bangers & mash with vegetables and gravy.

You take a jar of Pataks curry sauce (Tikka) you take a bag of Quorn chicken bits (no horse there then) you take a bag of frozen stir fry vegetables and you mix it all together in a pan and people tell me it is delicious. Now do I fess up to the truth or do I pretend it took ages and skill. Too late I fessed up.

Cate darlin’ I do something similar, but instead of Quorn, I use (Iceland) Chicken breast (chopped into bite sized chunks.

Oh Cate, what a cheat!!! Cook your own curry!

Fry a handfull of Chopped Mushrooms,
Cook half a cup of Frozen Peas;
stir these into pre cooked boil in the bag Long Grain Rice.
Serve with roasted Morrisons Chinese style pork ribs and microwaved Uncle Bens sweet and sour oriental sauce.
Couldn’t be simpler, absolute heaven.
