What are you having for lunch/dinner? (Part 1)

that’s what my son Steve said, I don’t want another roast dinner for at least a fortnight. He reckons he is going on a diet and so is the dog too. So I suppose that means all of us!

Me too Moyra darlin’ any left??? if so, what’s the address ??? - will be with you on the next train.

We had the Turkey Legs and Wings with a roast trimmings.

Didn’t have a Sunday roast today (NO the world isn’t going to come to an end!!!) I had a steak & Kidney casserole instead with lots of parsnips, carrots, leaks and potatoes cooked with the steak and kidney in a large casseroloe dish in the oven.

Here you are - tradional Irish ‘Boxty’ !

http://irishherault.wordpress.com/2009/06/24/traditional-recipe-for-irish-boxty/

Tonight we are having a chicken and prawn stir fry, with baby sweetcorn, snow peas, carrot sticks and spring onions, served with home made egg fried rice.

Finishing up the steak & Kidney casserole I made yesterday - stews and casseroles are always even better the second day.

I dont normally eat cheese but today I fancied some so I made cheese sarnies , and because I had no branston pickle I put brown sauce on instead …

I love cheese, with onion, relishes, (Branston’s make a fantastic hot chilli and jalapeño relish which goes absolutely brilliantly with cheese, especially with crackers), gherkins, those tiny pickled pearl onions, a chunk with an apple (granny smith or cox), oh Brie with grapes and ryvita or good crispy crusty French bread, grilled either on toast or crumpets. Oh and when I was at school would come home some days and mum would have sliced cheese onto one of those white aluminium plates (you know, the ones with a thin blue line around the edge) then she would pour on one or two beaten eggs and bake in a hot oven until the eggs cooked and puffed up. The best bit was the browned crispy crusty cheese at the edges. Or sometimes she would put the plate with the cheese on under the grill until it was all melted and runny, then pour it onto bread and make sandwiches, again the crusty bits were the best. Cannot imagine a world without cheese, and will never understand those who do not like it.

Tonight we are having Spag. Bol. Made the sauce and it is now just sitting there as the flavour matures.

roast lamb or duck, cauli, sliced green beans, Appach potatoes.

Had a Haggis in my fridge, placed that in a dish in the oven, peeled & chopped potatoes, parsnips, & celeriac. When cooked placed in a bowl with a large knob of butter and mashed them together. Served on a plate with the Haggis, and gravy - FABULOUS!!!

Curried pork and Egg Fried Rice. Bit on the hot side. Didn’t have much of an appetite today.

Lasagne, which was made yesterday. It is now cut and in bags in the freezer. Had chips and peas with it, it is a meal I enjoy.

Moyra darlin’ you can soften down the spiciness of your curry by adding ‘Blue Dragon’ Cocoanut cream (it comes in a block and you just cut however much of it you want) and add it to your curry. It will enrichen, thicken and take away some of the heat from your curry.

Home-made chicken soup for lunch today. My daughter is quite a good cook.

Chicken Curry today, Chinese style.

Might make a soup, see how I feel.

Had Turkey Roast dinner today.

Bloomin’ 'eck Suziej how big was that turkey:-):-). Had roast pork, apple puree, Apache potaoes (new) ,peas and sliced beans.:-D:-D

Belief it or not Hazel it was only a small Turkey 4.4kg and we got 5 meals plus the legs out of it, that’s having 3 large slices each.

Unfortuneatly no more Turkey left now.
