I’m just starting to make my Shepherd’s Pie now Linda.

Yum! I haven’t had it in a long time. I’ll sometimes make cottage pie, using beef (it’s cheaper than lamb) but a good friend’s mother, years ago, used to make the most wonderful Shepherd’s Pies and she’d invite me to stay for dinner because she knew I loved it so much. She was originally from England and made the most wonderful British meals that I could never resist.

Her Shepherd’s Pie and her fish & chips with mushy peas were my 2 favorites. She made the best fried fish in the world. To this day - like many of my own mother’s dishes - I haven’t been able to duplicate that flavor. Her Yorkshire puddings were also delicious, but nothing could beat that fish.

Now I want some of it, rest her soul. She passed away about 10 years ago. And I know I’ll never find fish like that again, anywhere. Unless, perhaps, I visit the UK one day.

I have to admit–that looks delicious…

It is

Today for lunch I’m having a grilled tomato sandwich and cottage cheese. And for dinner I’m making ham & cheese wraps. This is one of my favorites…

I scale the recipe to make just one wrap so I mix in a bowl 1/4 cup reduced fat Mexican shredded cheese, 1/4 cup corn, diced onion, diced red bell pepper (since the Mexi-corn has peppers in it, but I just use plain corn) 1 tablespoon light mayonnaise, 1 tablespoon light sour cream and then I spread it onto a wrap containing 2 thin slices of ham and I also add sliced avocado. It’s delicious.

And I’m so excited, I found the Florida avocados the other day! They’re yummier, in my opinion, than Hass avocados and they’re also lower in calories. I don’t worry about the fat in avocados (although the Florida avocado is lower in fat than Hass) because it’s mostly GOOD fat. But the fewer calories is a bonus because I can eat more of it. It’s sweeter and silkier than the Hass avocado. I could sit and eat a whole one. But they’re kind of huge, so I try and avoid that

Here’s a calorie comparison:

1 ounce of Hass avocado - 47

1 ounce of Florida avocado - 34

This is another good wrap recipe, if any of you are interested.

(yes, I’m a wrap fanatic, I’m always looking for new recipes or inventing my own)

i love wraps too–bu its a while since i had one–sinmilarly avacado–which i love. your wrap looks delicious—

I can’t wait to have it

So what’s this Slimming World thing about that you go to? Is it like a weekly or monthly meeting type of thing? Just wondering if it’s maybe similar to what we have here in the states called Weight Watchers.

Yes Linda–it is very similar to Weightwatchers–we have weightwatchers here too—both work the same–weekly meetings–plus online support–and with my group a dedicated face book page—Plus they can both be accessed online only for those who cannot get to groups–in this case WW is a lot cheaper than SW… I am lucky as both SW and WW meet at my local church–about 10 minutes walk from me.
Roght now at our church the SW group is about 6 times more popular than the Weightwatchers—a little cheaper to start–at SW i pay £4.65–at WW its £6.25–a week–a big difference when you are on a tight budget like me. Plus the SW diet is very easy to follow–no counting or calories–with WW you have to count points–although I believe they have now bought out a no count diet.
i lost a lot of weight with WW ages ago–about 30 years ago–i lost nearly 4 stone–but the diet was very restrictive, very tough–I kept it up for 2 years–but could not sustain it–with the SW diet–I may be losing slower—but I know I can live with this plan , hopefully for ever. Its not just weight–i feel so much better too.

That’s awesome, Mariana. It’s best to stick with something you know is realistically sustainable. I did WW many years ago and did lose some weight. But once I went off the plan, I gained it all back. That was just one of the many ‘diets’ I tried and I sincerely believe that dieting is what made me fat.

Well, pregnancy didn’t help either. I was at my highest weight ever right after my son was born. But I was no skinny-minnie at the time I got pregnant, either. I’ve been overweight and I’ve been too skinny - both sides of the scale I’ve seen. And I was skinny because I starved myself, to the point where eating made me sick. My doctor at the time told me if I didn’t start turning myself around NOW, I was dangerously close to slipping into the “point of no return” - anorexia nervousa - a condition in which many never bounce back from. So I had to literally retrain my body to get used to food again.

My sister was bulimic for many years. So we’ve both had issues with our weight most of our lives. I either ate too much or not enough.

It is well known that diting has a yo yo effect on lots of peoplre-thats why it is best to stick to a healthy eating plan—I have neber ever had problerms with being too thin, and do not believe I ever will–but overall health is more important than anything else.

I completely agree. But when you’re young, you don’t think of those things. You either eat mindlessly or you starve yourself to be thin. And I did both.

We had homemade Chicken Jewish Penicilian, yummy

I’ve always wanted to try that. Do you use matzo balls in yours or some other type of pasta/rice item?

No, Its a Chicken Broth, using Chicken Thighs or Whole Chicken.

Sounds tasty–and good for you too—I had salmon tonight with grated carrot, apple, and celery, with a small orange-really nice. I was out all day, so took my own sandwich–hovis with light Philly and a little caramelied onion relish–and a mullerlight yoghurt.

Oh, okay. The reason I asked is because most Jewish Penicillin recipes I’ve seen is made with matzo balls.

Yes Linda, some of the recipes do have Matzo balls or pasta in it.
The Jewish people eat Penicillin on Passover or if you have a fever.

I’m allergic to penicillin. Just the drug form, though

Although, ironically, I used to be allergic to chicken when I was a kid

No idea what I’m going to eat today. I’ll probably just stick with calorie-controlled meals since I have to work. It’s easier and faster that expending energy on fixing myself something to take, which I don’t feel like doing right now.

home made beef burger for me tonight–with grated carrot and apple .

I ended up not eating lunch today. The meal I took was kind of yucky, so I pitched it out after only a few bites. My son and his dad got take-out Chinese, so I got something from the Chinese place that I’ll have for dinner.
