Baked garlicky mushrooms with sweet cherry tomatoes and cheddar cheese, with some rice and salad leaves…

My plan is to enter into the search engine my two main ingredients and see what dish it throws up then cook it. Invention on the lazy side.

We had some chicken breasts that needed using up so I made a big pan of korma with it, had some for lunch and it left six portions for the freezer, it really does re-heat so well. :+1:

Take-away Fish & Chips.

Last portion of home made cottage pie from the freezer with peas and green beans, stewed fruit and yoghurt for dessert… :drooling_face:

I made a chicken and leek pie a couple of weeks ago, so it’s a portion of that from the freezer with mash, carrots and cabbage, wiith stewed fruit and yoghurt for dessert.:drooling_face:

That looks tasty Minx, I had to look it up to see what Cajun Chicken is. As you might now guess I know very little about food other than very basic meals.

Cajun Chicken:
“Cajun cuisine is a style of cooking developed by the Cajun–Acadians who were deported from Acadia to Louisiana during the 18th century and who incorporated West African, French and Spanish cooking techniques into their original cuisine.”

Perhaps I should start reading those online recipes that mostly I cannot be bothered with!

Purchase some good quality Cujan Seasoning and sprinkle gently over chicken if you prefer it mild, add a sprinkle of onion powder, garlic powder, paprika and some salt to taste (not too
much salt since the Cajun seasoning has salt as well)
and mix into your thinly sliced chicken breasts. You can add a dash of olive oil so it marinates easier.

Fry the seasoned chicken breasts in light olive oil for 5-8 minutes and Voila!

Thanks for the recipe Minx, at present I am learning a new way of cooking since my hob and double oven blew up! All I have right now is a microwave (no grill) a slow-cooker and one of those George Foreman grills. Replacing that hob and oven is my next task, I’ve managed without all those devices for a couple of months and haven’t starved, yet. Once they are renewed I will definitely give that recipe a try, it looks and sounds very tasty.
