Wife is out shopping, so, I’m just frying up five chicken sausages for me and the dog.
I can’t believe nobody has posted here for months. I wanted to share our yummy Friday dinner tonight. Poached cod with mashed potatoes and baby spinach. The first time I have poached fish, made in water with bay leaves from the garden, garlic cloves, chopped onion, white wine, olive oil, salt pepper. The baby spinach sauteed with lots of butter and some water, fresh grated nutmeg. Healthy and delicious.

My menu for dinner tonight is - homemade cheese/onion quiche, baby potatoes, glazed carrots, cauliflower and broccoli.
Fresh fruit salad for pudding.
Chicken stir fry. Home made.

Today is diet day, so boring.
Tomorrow, lamb, roast potatoes, mixed veg, Yorkies and a red wine sauce.
Chicken fajitas for us tonight made via sheet pan in the oven - less skiddling than the stir fry method.
… buying prawns from Shepherds Bush Market as we do almost weekly, we thought we’d try a mackerel as they looked so nice.
We always have homemade tomato sauce in the freezer (tomato, onion, garlic, herbs) in small individual portions, so I defrosted one and simmered the mackerel in that for about five minutes. Served with boiled pots. Very nice. And we have some excellent cheeses we smuggled back from Portugal …

Dinner today will be:-
Homemade chicken/mushroom pie, hasselback potatoes, butter beans, peas, and carrot/swede mash.
Followed by cheese, biscuits and grapes.
Here it will be non-dyed smoked haddock with boiled baby potatoes, carrot & swede mash and tinned peas - no dessert, even on a Sunday, as we are not sweet toothed.
Tonight we’re having roast beef, yorkies, etc, washed down with a rather nicely chilled rosé.

So we had the prawns tonight, I always enjoy those. I get Ms d00d to prepare them, then chuck them into hot olive oil infused with garlic & ginger.
Last night we had slow-cooked Braising Steak with onions in gravy, green beans and creamy mashed potatoes, followed by kiwi fruit and ice-cream.
Cooking Crispy sesame chicken with an Asian sticky sauce and Jasmine rice tonight. No dessert and of course, I am having to starve myself until then due to the calories involved.

Chicken chasseur tonight with fine green beans and mashed potatoes. First time I’ve made this dish and used the BBC good food recipe. So simple and delicious. I’m planning to work my way through classic french dishes. It’s like dining in a top restaurant. Yet it’s so easy to make I can’t believe I never tried it before!
I am hoping to lunch at Selby Garden Centre - which means Corned Beef Pie with chips and garden peas!
On a diet…so not much for me especially after trying on swimsuits yesterday.
