What are you having for lunch/dinner? (Part 1)

Am sitting here, quietly replete, having made myself a huge cauldron full of beef stew, with slices of Choriso, black pudding, two large potatoes, three large carrots, three Parsnips, a slice of Swede, couple of small turnips, two onions, some lentils and 2 litres of gravy. There was so much stew, there wasn’t any room in the cauldron for dumplings, but now I’ve had a large plateful I can make dumplings for tomorrow.

Home made meatballs with a Mozzzarella topping and brown rice tonight.

I made a beef stew in the slow cooker. Had sis staying overnight so I made a huge meal lunchtime. Peas, sweet corn, greens and leeks, mashed potato, and dumplings. We both thoroughly enjoyed it and I have a tiny portion left for tomorrow, maybe. Saved me having to freeze much of it.

Last night we did pizzas, and as she brought her own, I still have half of mine left which I’ll have for tonight.

Cheese, Onion & Mushroom Omelette with Salad.

Still wading down the stew in my cauldron - Having made room yesterday, I made some suet dumplings and will be eating more of them with the rest of the stew later today.

Might get a Chinese takeaway later. Been painting and kitchen top still empty of appliances till the tiles dry.

Any road, don’t feel like cooking after all that work. I still have to lift the mini and micro ovens back onto the work top before showering. Phew…

Hi, just demolished a thickly cut slice of wholemeal bread, which I spread with “Seriously Strong Cheddar” from the tub, and then placed two rolled up slices of Wafer Thin Ham on top.
I had this as an open sandwich just with the one slice, but it was yum. I also had an Apple for afters.

Tonight for Dinner HWMO will be having a Lasagna and I will have a jacket potato with Tuna Mayo filling.

Since the weather has taken a down turn and returned us to ‘winter’, have taken another joint of beef from freezer (last night) and will now cut it into bite sized chunks and start peeling and chopping accompanying veg preparatory to making a caldron of beef stew and dumplings.

A fry-up today of:

2 Eggs, 2 Bacon, Mushrooms, Bake beans.

Shop bought mash, sausages, onion, beans and gravy. And a fruit pie and cream.

Thick Gammon slices, Homemade Oven Chips and a Fried Egg.

Today we are also having gammon - baked .
Broccoli and I don’t know what else.

Fish 'n chips with pickled onions!!!

Roast Chicken and Leeks, R. Potatoes, Dark Greens, Carrots, Gravy.

Chicken yes, but unsure whether to roast it or make a stir-fry with it. Will decide when I get into the kitchen later this morning.

Smoked Haddock, Jacket Potato, Broccoli Cheese, Courgette Bake.

Cajan Chicken Breasts, R. Potatoes, Carrots, Brussels, gravy.

Tonight I made lamb tandoori kebabs with basmati rice and a side salad of red onion coriander and lime juice. I’ve been searching for a really authentic tandoori paste recipe and I think this one is the biz. But the only downside is that it contains fenugreek which stinks the house out. Worth it though!

Most recipes I’ve tried skimpt on some of the spices and that leads to a disappointing outcome. This one is far more generous and gives a really full mouth kick. I’ve been reluctant to use fenugreek after stinking the place out a few years ago but apparently it’s full of really good health benefits.

Roas’ beef, yorkshire puds, roast tatties, carrots, & parsnips and gravy. I may even have some rum & raisins icecream afterwards too.

Made a meat loaf yesterday (and frozen a portion) so that’s ready to bung in the oven. And will also do the roasties - tats, sweet tat and parsnip - and a choice of other veg.

Halfway through cooking the meat loaf I will sprinkle dry stuffing on top, to give some crunchiness to it.
