What are you having for lunch/dinner? (Part 1)

'addock & chips with a couple of pickled onions an the onion vinegar to wash it all down. - FABULOUS !!!

Lunch = homemade scotch egg and salad.

Dinner = roast gammon, butter beans, carrots, jacket potato.

Full Sunday roast - beef and the trimmings. Was going to make another beef stew tomorrow, but having carved some slices off the joint, there isn’t enough left to make a stew.

I put some chicken in a marinade at lunch time. Garlic, spring onions, ginger, orange zest, honey, soy sauce and orange juice for the marinade. The chicken to go on kebabs with paprika and onion slices and grilled over wood coal and served on a bed of rice. A sauce made from peanut butter, garlic, ginger, raisins and chilli paste to go over the top. And to top it all off Mrs K baked a rhubarb cake with rhubarb fresh from the garden.

Stir fry for me - chicken, prawns, mushrooms, onion, spring greens, baby sweetcorn, rice, with pasata, teriyaki, paprika, garlic, and sweet chilli. I made a great wok full - enough for 3 days at least. Sounds messy, but it was very tasty and low in fat, plus I am trying to lose a bit of weight. Will probably add some more mushrooms and other bits and bobs to go with it for the other days, for a bit of variety.

Ive a pack of lamb mince here and as I’m going to be spending the day cleaning the kitchen cupboards out, it’s being turned into a Keema curry.

One pot cooking is my favourite kind of cooking :slight_smile:

Had Doctor appt this morning - on way home managed to walk past Greggs bakery and bought a couple of these:

Also had to walk past pie shop (on my way to the bus stop), bought a Lamb Kofta pie and a cherry pie and custard too.

Me…Baked potato and salad. Highlander…Baked potato, steak, and salad… Followed by his usual dive into an ice cream tub lol.

Pasta in a tomato sauce with cheese and pepperoni, broccoli.

Followed by an apple.

Stuffed pork tenderloin with carrot and parsnip mash , roast potatoes and cauliflower

Have a chicken in as well for the next two nights

Roast chicken salad. with baby boils tonight, I cooked the chicken yesterday as I had the oven on so really a no cook day - yayyyy

And yet, with the aid of a couple of Metformin, my blood sugar levels are staying within normal parameters.

You are very lucky UJ, I wish mine was.

Shall heat up the rest of the Chinese takeaway (sweet and sour chicken and fried rice).

Had pie and mash for lunch while in Romford.

Steak & Kidney pudding, sweet potato, mixed veg and gravy. This was about 14.45 this afternoon. Just done a blood sugar test - reading is 9.5.

I was out to lunch today - a friend’s 82 birthday - we went to a carvery and had Turkey and Beef with roast potatoes, roast parsnips, carrots, broccoli, cauliflower cheese and, of course, a Yorkshire pud. After we had done a little shopping we came back to my place for coffee and chocolate eclairs.

Had a small packet of plain crisps about half an hour ago.
