What are you having for lunch/dinner? (Part 1)

Yet another medical appointment shortly, had no time to prepare or eat lunch, so may have to have lunch on the run and a main meal later this afternoon or evening.

Lambs Liver, Mash, Peas, thick onion gravy and onion rings.

Egg and chips I really fancy that today, simple but tasty.

Accompanying a friend at an Atos interview at lunchtime today, so won’t get my normal lunch till much later - will have full (cooked) breakfast shortly to see me through till dinner this evening.

I made tandoori chicken from scratch and indian style rice with an indian side salad (red onion, cucumber, tomato and a little coriander with a lemon wedge. The chicken was tasty but the rice is amazing. Totally yummy mid week treat.
Even nicer because I bought some fresh turmeric out of curiosity yesterday and added some of that too. Here’s the recipe.

How did you do the marinade for the Chicken:

If I was making it, it would be:

Natural yogurt, Tandoori spice, Cumin, Corriander, Garlic, S&P, Chilli, mix in the chicken and marinate overnight.

What is your version please?

Tonight I am having chilli with rice, but using turkey mince, because it has a lower fat content.

Hi Susie, it wasn’t too far off mine. But before marinating you heat coriander, cumin, turmeric, cayenne pepper, garam masala and paprika in oil for a few mins. Being careful not to let it burn (I wasn’t as careful as I should have been!)

Then you wait until that’s cooled completely before adding to yoghurt with four cloves of crushed garlic and a chunk of grated ginger (they said two tablespoons but I think I only used less than one as I was worried about using so much! Next time I’ll be braver).

The ingredient that makes the most difference is the lemon juice (I used one lemon, they say 2 tblspoons). You whisk that into the marinade. That gives the chicken that authentic tandoori kick.

Cooking the spices in the oil does make your hair and clothes stink so I had to have a shower before bedtime! But it was worth it for the depth of flavour. I left it in the fridge overnight and cooked the following evening. But it’s a long time to wait!

The fresh turmeric in the rice I made was a really nice touch. A real treat. I did also use powdered. I think I will add to the chicken too next time. It has a slightly different flavour to the powder. Nice different. I was really surprised to see it in tesco.

yum! I love chilli and tried different alternatives last year. Even made it with quorn mince and also tried chickpeas and lentils. Did it work out nicely with turkey? I don’t think I tried that yet.

Am having the Tandoori Chicken today with Vegs.

Vegetable stew with cheesy mashed potatoes.

Have some chicken drums to cook. Holly will have boiled, and I have been going through the cupboard for some marinade powders to use up. Shall do a couple in the roasting tin.

Liver and bacon in a mushroom onion sauce with mashed potato and garlic cabbage.

mmm that sounds tasty Kev, never put garlic in my cabbage before.

Beef in pastry, baked sliced potato, bake beans and mushrooms.

:038:yay, its Saturday, no hospital appts, no one wanting to see me for anything medical, I actually have the time to bung some food in the oven and cook it, so am having some battered fish & oven chips with a couple of pickled onions on the side!!!

Just a little butter with lots of crushed garlic in a frying pan and slice the cabbage in 2cm wide strips. I just heat the cabbage slowly until it’s still a little firm and then serve. Sometimes I fry an onion separately and add that in. The cabbage is quite sweet and very tasty.

I have much the same recipe, but add in a green onion, quarter pound of fresh made bacon bits, and cook the cabbage til soft. Gives me terrible gas, but I live alone so I don’t care…just turn the window fans to ‘exhaust’.

That recipe is very similar to Bavarian cabbage which is a very traditional German recipe. my wife cooks it and I love it.:smiley:

Had a big family breakfast, ivana came over to join us with her sister, so we had a big fry up, not as big as Uj would manage but big enough we won’t need lunch today. I’ve got crumpets in for tea later on, and strawberry jam to top them.
