What are you having for lunch/dinner? (Part 1)

Still on the left overs baby hot dogs today.

Made myself a big tray of cottage pie yesterday - will finish that up at lunchtime, then cook a couple of pies to take with me to the hospital tomorrow.

Depends what I fancy having from the Morrisons menu lunchtime.

Then for supper I’ll finish off the tuna, egg mayo sandwich filling, quiche, and mixed beans (a third meal out of all that…apart from the quiche, which I got yesterday.)

I digress…

Spaghetti Bog

Mini fish and chips, and peas, with a pot of tea, in Morrisons. Very nice.

:cry: Having eaten my cottage pie at lunchtime and then placed the (real pie co) pies in the oven, ready for my lunch tomorrow, when I went to fix my ‘tea’, I couldn’t resist eating one (steak & mushroom) - it was fabulous!!!

Lightly dusted chunky fish of some kind and stir fried veg.

This evening I had another Tesco’s lightly dusted, chunky cod fillet with green beans.

Extremely tasty :smiley:

Can’t decide if the cod is as good as the haddock, so will have to conduct an experiment ar some point.

Chicken , Rice and stir fry veg with sauce

On Sunday I cooked another full ‘roast beef’ lunch with all the trimmings. There wasn’t time on Monday to make the stew 'cos I had to attend the vampire clinic, but yesterday I peeled and chopped: carrots, parsnips, swede, celeriac, and leeks, added some lentils, chopped the beef into chunks, made 2 Lts of gravy and added some hot curry too. Set the whole lot bubbling away on the stove and ate an enormous plateful yesterday afternoon. There’s enough left in the cauldron for me for lunch today and possibly tomorrow too.

Veggie sausages with roast vegetables cauli, potatoes, tomatoes and mushrooms. Might put sweet potato in too if anyone gets home early enough to cut it up for me I don’t think I should hold a sharp knife today bit shaky.

Having a chicken and veg cup-a-soup with bread for lunch and a cheese and tomato creamy pasta bake for tea later :slight_smile:

Stir fry various veggies and tofu

Haven’t been ‘out’ in a long while, so going to ‘spoil myself’ this evening - going to a Thai restaurant.

Boiled ham, mash and mushy peas here tonight

chili con carne. First time I’ve made it from scratch and it’s yummy!

Mmmmmm … I used to make this in my pressure cooker … far quicker than any other way and I would always have mince (lightly boiled to remove the fat) in the freezer.

I’ve never thought of boiling mince first to remove fat. What a good idea!

So quick …

Put in saucepan
Add boiling water and heat on hob.

Takes a minute or two and then decant into a large sieve.
Pour more boiling water over it to remove excess fat and let it cool (or stick it under the old tap) and then put it in freezer bags.

Simples :wink:

Ready for chili, bolognaise, lasagne etc.

The only downside is that the saucepan needs washing … and the sieve :confused: :surprised: :cry:

Looking at brocolli soup homemade or mushroom soup again homemade. With a hunk of homemade bread either would be nice.
