Yes and it has to be my favourite meal especially when my lovely husband makes it for me.
Expended lots of energy I don’t have on Sunday and made a cauldron of beef stew and dumplings - am now wading through this through the week and saving my energy standing in my kitchen and peeling, chopping and preparing veg and meat for other meals. Very gradually am beginning to recover my energy again, am sleeping a little better and not waking up so much in the middle of the night, but this thrombocytopenia is, I feel. going to take a long time to recover from.
I’m glad you are feeling a little better Uj take care though don’t over do it.
Good idea to batch cook, if you’d had any warning better to have done it before you got ill !
Back to lunch, doing egg and chips today. Sometimes simple is all you fancy.
Yes there were warning signs, but because I didn’t know about this disease I wasn’t alerted to it - even ENT Consultant who I informed of one of these signs ignored and dismissed it.
Often happens I guess they don’t know everything. That you are feeling better is what matters now. Take care and keep getting stronger.
Rather boring compared to lunch that others are planning but looking forward to it all the same. Have the day to myself today so will mix a tin of Tuna Steak with lemon juice, Mayonnaise and a tiny bit of Black Pepper, Toast some freshly cut bread without the crusts. little bit of butter to spread on them and then cut into soldiers and spread my Tuna mix over the soldiers with some chopped fresh tomato on the top.
Yum with my cup of tea. A piece of Lemon Cheesecake for afters.
Nice to have you back UJ, hope you feeling better. If I lived near you I would have brought you a nice casserole over to save you having to cook.

Drat!!! - too late, am already making a sausage casserole for myself today, having finished up the cauldron of stew and dumplings yesterday. Doctors have given me a course of Prednisilone (steroids) and am eating myself out of house and home because of them - had a full fry up breakfast theis morning and will be cooking the casserole shortly, then have some hot-cross buns for ‘tea’ and maybe round it off with some choccy biscuits.
Yum! Maybe I would have come round and have you cook for me UJ. :-p I know what those predisoline tablets do for your appetite, I was on them for over 6 months after coming out of hospital. Never mind, at least it seems you are eating plenty. Take care x
Have a few steak & Kidney puds in my freezer - after I return from Hospital appt may have one of those with some steamed veg and gravy today.
Had a chicken style breaded quorn thingy with brocolli and mashed potato. Couldn’t manage it all so doggies got the mash so they enjoyed that.
Nothing special. Dinner as usual white rice with cucumber salad and chicken curry.

Took nice piece of beef from my freezer yesterday - defrosted overnight. NNow in slow cooker with a sliced onion and a crumbled oxo cube. Will be ready around lunch-time (circa 13.00), in the meantime will peel, chop and roast in the oven some parsnips, carrots, tatties (and yet another onion) and them make some gravy from the juices of the beef.
A roastie today, with roast pork slices.
Only the two of us today so cooking a small, very lean gammon joint and having that with cauliflower, carrots and peas with Onion sauce, followed by home-made Bramley Apple Pie and Ice-cream…yum!

Carved the joint - put half of it on plate together two large parsnips, two large carrots, two potatoes, an onion and two yorkshire puds. Ate all of it - finished off with a dish of icecream, since when have had half-dozen biscuits - and I’m STILL hungry!!! These Prednisilone steroids are giving me a huge appetite!!! - just as well I’m not anywhere near any of you on here - would be eating you out of house and home and then some!!!
Very wet here this morning. Have taken remains of beef from freezer and its now quietly defrosting. Later on will use it as the base of a large beef stew with suet dumplings again. In the meantime, woke up famished this morning (those flipping steroids tablets!!!) so have had a large ‘fry up’ - eggs, bacon, black pudding, hash browns and finished up the last few chestnut mushrooms (sainsburys are bringing me further supplies later this morning).
