What are you having for lunch/dinner? (Part 1)

Hi May, I do Swede, Carrot & Pot Mash.

Just had left over gammon from yesterday and I did jacket spuds with cauliflower, peas and carrots.

Aye Susie,there’s nothing We can’t mash with a guid dollop o’ Lurpak butter.:smiley:

Oh yes you must have Lurpak, but I will have to get permission first from our Cat, because the Lurpak is hers, we have margarine.

Today we are having: Large Cod in batter with Jacket Potato and Mushy Peas.

I’m hoping to have chicken kiev with cheesy jacked potato and peas tonight.

Bought the potatoes last Thursday in Tesco as they were selling at half price, thinking I’d want something quick (maybe with beans) on getting home last night, but I didn’t fancy them then. Going shopping today so hope to buy the kiev and peas, amongst other things.

Tonight we are having a chicken and porcini mushroom risotto. I will need to open a bottle of wine to make it, so we may as well finish the bottle :wink:

Im having pancakes with fresh squeezed orange juice and a sprinkle of caster sugar …yummmmm!

Veg soup; kiwi fruit & yogurt

Had banana sandwich.yog’ B’berries for lunch…veg’ curry and brown rice for dinner.

Pancakes for me today. Two with onion gravy and if I’ve room I’ll have one with lemon and sugar. Sorted.

We are having far more prosaic faggots, peas and potatoes. I think pancakes would be too much after that, so I won’t make them today - save them till tomorrow or perhaps the weekend

We must swap ideas on Risottos sometime. They are so easy to make yet so tasty.:slight_smile:

Might do pancakes tomorrow. Thoroughly enjoyed my chicken kiev supper.

My favourite is aparagus, made with the lovely fresh English asparagus (mmm, won’t be too long now …). If I haven’t got a lot of asparagus then peas are good to pad it out, and of course any bits of leftover chicken go well.

Today it’s braised brisket take 2, with the second half of Sunday’s. I’d normally have frozen it, so as not to have it twice in four days but I was too lazy a) to decant and freeze it and b) to think of, and cook, something else sigh

We are having battered fish pieces with peas and sweet potato chips and bread and butter :slight_smile:

Here is a good one for you. Cook your rice with shallots as normal in fish stock ( and white wine if you have some) and, near the end add a tin of red salmon with lightly chopped watercress. before serving stir in a tablespoon of marscapone cheese to make it nice and creamy.
You can do the same but adding prawns and chopped green pepper( instead of salmon and watercress)… for a different taste ( this is especially nice if you have any bits of smoked salmon to add at the end) .
