Sounds really nice. For next year I am deffinitely getting lamb and I shall try now I did say try to grow some new potatoes in rather a lovely bag I have seen from Unwin.
Roast Lamb is always very tasty, but I have a slightly different way of doing it - place leg of lamb in roasting tray and make a marinade: 1/2 Pt orange juice, 3 Tbls soy sauce, 3 Tbls Apricot marmalade, 6 (crushed) cloves of garlic, 2 Tsp dried Rosemary. Leave Lamb in Marinade for minimum of 2 hours. When preparing to cook, take lamb out of marinade and dry roast for approx 35 mins, remove from oven and drain excess fat from roasting tin. Pour marinade over lamb and return to oven - continue to cook, basting lamb in marinade at frequent intervals.
That sounds very tasty! Can’t try it. leg of lamb is too much for one person…
Wrong Dandysmom!!! - I too live alone. Having carved and served as much meat as you want for the Sunday roast, strip rest of meat from the bone, and place either in freezer or fridge to use at a later date for other different meals.
I think one of our number might be contemplating having seared hand en croute.
Yes, that’s what I do. Same with stews, casseroles etc. I’m still not used to just cooking for myself, so I always freeze any leftovers for another time.
I’ve just had roast beef, Jersey Royals, Julienne of carrots and gravy. Am topped up now. :-D
We’ve just had Roast Lamb, with cauli, Runner Beans, courgette, Chard,Carrots and spuds all the veggies came out of our garden except for the cauli.Tomorrow i will make a lamb stew.
I’m not big on leftovers; prefer to make single servings;have gotten very good over the years at adapting many recipes for one,
Tonight will be broiled crab cake, fresh spinach and potatoes rissole.
For all you ‘red meat’ experts, I have a Zebra steak in my freezer which, sometime this week I will defrost and cook - am looking forward to it, long time since I’ve eaten Zebra.
Lasagna and a green salad, followed by sliced peaches and a pot of chocolate mint tea.
We have started trying something new as we both have to change our diets. I am on a low fat diet and hubs is a diabetic and must watch his sugar and red meat intake.
Last night we had grilled chicken on the barbeque, lemon and coriander couscous and a Morrocan style salad which I made with chick peas, peppers, cumin, mint and parsley. It was absolutely delish.
Linguine with pesto,salad, ciabatta roll…
I’ve just had some left-over mushroom rice and Madras sauce which I got from the Indian last week, but I added some prawns to it from my freezer. Deeelish!
Feeling a bit off today with the heat. Going with iced tea and fruit I think.
A stir fry: onions, chillis, green pepper, mushrooms, celery, coarsely chopped tomatoes with some of their juice and black beans served over rice. And a ciabatta roll, and mousse cake for dessert with a cup of green tea.
Sounds delicious Eileen!
Steak & Kidney casserole. Fry onion and mushrooms in pan, toss steak and Kidney in Tbls plain flour and add to onions and mushrooms, prepare appropriate veg (leeks, parsnips, swede, celeriac and carrots) and add to pan. Make stock and pour over ingredients in pan. It will thicken because of the flour and as it boils and thickens scoop it all out into a casserole dish or slow cooker and cook through thoroughly. Bon Appetite everyone.
For lunch today I am having sushi, a friend got me onto this delicacy not long ago and i am now addicted.
yum
Nothing wrong in fish per se Shirley darlin’ - but I prefer mine cooked.
