We have just had Marinated Pork Chops with Roast Potatoes, Brussels, Parsnips, Peas and gravy.

Back to Sunday and full Sunday roast again!!! - wonderful!!!
We had an Indian take-away today for Mother’s Day.
Mother’s Day, and my son cooked a roast chicken, roasties, stuffing, mashed swede and carrots, cauli and broc, with proper gravy, and truly scrumptious it was too! Made extra succulent because was cooked for me.
Tomorrow we will have a bubble and squeak made from left over veggies with added kale for flavour, and cold chicken. For pud a sort of experiment. The other week I bought a pineapple then forgot it, earlier today my son used our little gadget to core/slice it and we were going to have it after dinner, but forgot. So just had this idea; blind bake sweet pastry crust, then when cool line with quick gel, and arrange the pineapple slices on top (maybe with glacé cherries) then top off with cooled ‘thick’ birds custard. What do you all think?

Yes darlin’ - sounds delightful, but might I venture to suggest: forget the glace’ cherries but add some cocoanut flakes or sprinkle with ground cocoanut.
Pineapple and cocoanut go together like Gin & Tonic - can’t have one without the other.
Today we are just having a salmon salad.
We are onto the salads now that the weather is a bit nicer, we had pork chops with salad last night and tonight we are having a nice ham salad as we are taking the cat to the vets and we will be running late.
My husband makes a lovely salad always makes it look lovely on the plate where as I just throw it on. 
Cheese salad sandwiches, made with home made bread.
Later tonight we are making chicken and black bean stir fry. Yum yum
Took a chicken breast from freezer early this morning. Will chop and cook with onion, mushrooms and Iceland ‘Oriental veg’ and pour over ‘Uncle Ben’s’ Sweet & Sour sauce.
I have chicken too. Bought a cooked (plain) one in Asda this morning for £2. What a bargain, ey?
I have just parboiled some potatoes, leeks and carrots, and bunged it all in a frying pan with some frozen stir fry mix, and added some chicken. When cooked, will add some BBQ sauce.

I have found an awesome replacement for popcorn …

All I did was to put a load of Tesco everyday value oats in a big bowl with a little water, then mashed it together in to a thick dough. After that I stuffed it in a deep small loaf foil bake thing and cooked it for a while. Slices in thick pieces just like a cake. Perfect snack food for runners and no busted teef

We had a roast dinner today of Roast Gammon, Roast Potatoes, Parsnips, Baked Onion, Dark Greens and Carrots.
Jacket spud and pasta for us today, not too heavy…
Rotten day yesterday with all that pollution, had to have Paramedics here and then a visit to the Doctor… On way home passed by the pie shop so have ordered a piglet pie which I will collect later this morning.
Just had Chicken Piri Piri with new potatoes and Courgette Bake.
