A good Saturday standby - sausage casserole
Never made it to the joint last night, . . things diverted me off track, . . I shall have another attempt at the joint today.
Broiled swordfish steak, fresh spinach, curried potatoes, ciabatta.
The rest of the spinach, tuna sandwich and crisps.Don’t cook Monday.
Yet again I missed the joint yesterday, . . thank god it’s in the freezer . . I’ve been trying to cut down on food since I put on a stone over the holidays, . . I shall decide what to have later, maybe a sandwich or two ?

The joint stayed in the freezer and I had a home made beef olive, . . . with gravy.
I’ve become addicted to pork escalopes for a week now, . . thinly sliced fillets dipped in a beaten egg then coated in bread crumbs and fried in oil, . . yummy. . . it’s funny how you’ve never had a particular dish for ages then all at once you latch onto it eh.

One of my favorites: broiled crab cake, cauliflower, curried potatoes.
Had a guest for dinner today - so made fried cod fillets in a homemade tomato sauce with oregano, basil and thyme. Just preboiled potatoes, sliced & seasoned with salt, pepper & paprika and fried in the pan to go with it.
To follow I made a traditional dessert wich word by word will translate into smth like; “veiled farm-maids”. It’s made of; apple, sugar & water - boiled until jam-like - breadcrums fried in a pan with sugar, butter and cinnamon - and whipped cream. Served in a bowl with the apple-“jam” and fried breadcrums in layers and the whipped cream on top.
If you know this dessert I would love to hear what it’s called in english.
I don’t know that dish, Anna, but it sounds simply delicious; hope someone will come along with the name.
This is a tradional dessert in Norway - but I don’t think it’s genuinely norwegian.
If you want to try it - this is one of many recipes;
(serves 4)
3 apples, 4 tbsp sugar, 1/2 dl water. Peel and cut the apples into cubes. Boil with sugar/water until “jam”-like.
Fry 6 tbsp of dried breadcrums with 1 tsp cinnamon, 2 tbsp butter and 2 tbsp sugar in a medium hot pan.
Whip 3 dl of cream with a little sugar.
That’s like Apple Brown Betty which is a very old recipe here, but seldom made, or at least seldom available on menus etc.
Here’s a recipe. It’s very tasty - possibly too calorific for modern tastes, especially as you are supposed to serve it with whipped cream
Ingredients
* 2 1/2 lb apples (or other fruit in season)
* 8 oz fresh white breadcrumbs (about 6 slices)
* 5 oz brown sugar
* 3 oz butter
* 5 oz raisins or sultanas
* grated rind of 1 lemon
* 2-3 tablespoons lemon juice
* grated nutmeg or cinnamon to flavour (less than 1 teaspoon, a generous pinch)
Making and cooking it
- Heat the range oven
- Peel, core and thinly slice the apples
- Grease a medium-sized ovenproof dish
- Put one third of the breadcrumbs in the bottom and dot with some of the butter
- Put half the apples on top
- Sprinkle with half the sugar, lemon rind, lemon juice, raisins and nutmeg or cinnamon
- Put one third of the breadcrumbs on top and dot with more of the butter
- Put on the rest of the apples, sugar etc
- Cover with remaining breadcrumbs, dot the top with the rest of the butter
- Cook for about an hour in the oven, until the apples are tender and the top is golden brown
