Tonight we are having Breast of Chicken in Peppercorn Sauce and Vegs.
Have mincemeat, have potatoes, have onions, have frozen mixed veg, have cheese. Therefore Cottage pie beckons today.
Juicing day today, and if it gets as hot as yesterday will appreciate no cooking LOL.
In all that heat yesterday lunch-time Julie darlin’ - I still cooked a full roast.
We were too busy enjoying a picnic in the shade of an oak tree to worry about roasts UJ, getting out there and enjoying life is far more important to us these days than food. Huge change in attitude to cooking and eating has opened our lives up to many more possibilities and eating less has given us both more energy which is amazing. Makes me wonder what we could have achieved if we had done this years ago !
I bought a citrus chicken from Lidl and put it in the halogen cooker for an hour and fifteen minutes with red onions wrapped in bacon. I served it with green beans and a creamy sauce. The meal was brilliant and the chicken was only £3.99 for a 1.6kg bird. No carbs but no carbs missed.
To Susie J, Sorry babe, a bit too far to come. But they are so much better nowadays, the worst part is the injection and even then some dentists will numb the area first - just ask.
Had early lunch cos had no brekker fish chips and mushy peas only small portion though. fruit and salad of some sort for tea.
Strawberries and melons are plentiful and cheap making lovely healthy puds with a yogurt topping.
Healthy home made fish cakes, made with smoked Mackerel and herbs from the garden … they don’t look too good to me but perhaps they will taste all right …
I’ve often found the recipes that don’t look to good taste lovely so hopefully your fish cakes will as well !

This evening we are having Thai Curry, Rice & Marrow.
Spring greens, broccoli and tofu for me, meat eater has another juicing day today. He has lost 5lb this week so feeling really pleased with himself.
I made my own vegetable broth, and then had sandwiches an hour later. Can’t seem to eat much in this hot weather, although it has turned a little cooler now. 
This evening we are having, Sausages, Mash, Mushrooms, Peas, fried onions and gravy.
My friend Lisa calling on me later this morning - treating her to an ‘Indian’ in a restaurant just down the road from me.

It’s Wednesday son’s day, so today it’s a full roast with lamb.
Just got back from a very leisurely lunch with my friend Lisa - we both had some Chicken Biriyani - it was fabulous!!!
