What are you having for lunch/dinner? (Part 1)

Got everyone here today so stuffing a chicken with sage and onion and sausage meat, doing sainsburys ready made Yorkshire puddings, with courgettes and mushrooms and green beans for most of us, then doing a mushroom plait with walnuts and courgettes for the veggies amongst us.

Don’t have enough chairs so will be pulling the table up to the sofa and sitting some on cushions to reach their meals and children will be on the floor round the coffee table, so Mollie and Betty dogs will be well fed I think LOL

Ooh, can you find another chair for me please Julie?

Well there will be plenty to go round so you wouldn’t go hungry Stella just need to bring your own chair LOL

Tonight we are going to have a ‘chopped’ salad, with chicken and some jersey royals. It is a case of ‘everyone in the pool’ when it comes to salads in our house. All the usual salad stuff, plus grated carrot, sweet corn kernels, grapes, teeny cheese dice, crunchy bacon bits, a quartered boiled egg each, some olives, oh you get the idea. Not a lot of each, just enough that each forkful is different, a sort of salad ‘meusli’. lol

Like the sound of that Mmmmm

Tonight we had homemade chicken tikka kebabs, pineapple, peppers on skewers with Rice & big flat mushrooms.

Lunchtime today we are having leftover Gammon, pot., greens & carrots.

Was out at my Sister’s 70th birthday ‘bash’ last evening - held in a carvery restaurant - beatiful food!!! - started off with a couple of Salmon steaks and some salad rice and peppers, then had a large slice of roast Pork, with an additional slice of Gammon and all the appropriate roast veg, yorkshire pud and gravy. ‘Afters’ was a fabulous Mango compot, so went back for second helpings of that - it was delicious.

later this morning will be doing my own roast (chicken), potatoes, Parsnips, Carrots & onions.

Feel like we ate too much yesterday so a smaller meal today doing low fat cauliflower cheese with leeks.

I’m sure I saw someone suggest a recipe thread, here is one started some time ago it has some nice stuff on it and we could now go on and add some new ideas. http://www.over50sforum.com/showthread.php?t=102

Sunday today and the whole tribe are decending on us, so I’m doing roast beef and all the accompaniements. As for dessert, I don’t care what they say - I’m having my way and I don’t care if it is old fashioned. We are having a beautiful Black Forest Gateau I found in the freezer - left over from Easter.

That’s a good idea a better place for suggestions too IMO

UJ, I have no idea how you manage some of your meals! For instance your double salmon steak starter above would have been more than enough for me, in fact just the one steak would have been sufficient. Oh to be sure would have loved to have continued with the roast, just could not find anywhere to put it.

I could have managed much of that a few years ago you train yourself to eat larger amounts over many years, it was only when I realised it wasn’t hunger but gluttony I managed to stop it. At a point now where I also couldn’t eat it but I do understand how it can be done.

A number of years ago I developed a condition known as achalasia, it actually took many years to diagnose in fact. Basically what happens is that the peristaltic action in the oesophagus ceases, and the sphincter into the stomache gradually closes up until it is almost closed completely! (Make a fist then look at the teeny tiny space barely visible in the curl of your index finger and you get the idea of how small)Anyway, by the time it reached what is known as ‘end stage’ I could barely eat without extreme discomfort as the oesophagus was stretched so much (a barium ‘swallow’ X-Ray showed what looked like a wine bottle standing on its rim with a cotton thread dangling down). Eventually I was living on that stuff you drink when de-hydrated, you get it in sachets and totally forget the name (doh), I was literally having a teaspoon every hour or so. Anyway my point is that even though they can snap the sphincter back open, it never entirely closes again thus reflux can occur if I am not careful, and the peristalsis never returns so food has too sit there until it eventually works its way down. Hence small meals are vital

Sometimes if have been eating too much dry and stodgy stuff too quickly it gets stuck and takes huge amounts of back thumping to shift, causes some amazed looks if we are eating out!

Anyway I soon learned eating big meals was painful and small was the way to go. There was a time when a huge three course meal plus coffee and even cheese and biscuits would have been no problem, but now thought fills me with dread.

That must be hard to live with Daisymay, cannot imagine it myself. But small meals seem to be healthier so perhaps it could be a blessing in disguise and you will out live us all eating so healthily.

we had roast beef with creamy mash green beans, white cabbage, carrots and peas followed by home made apple pie and cream.

We too had roast beef, with roast spuds, carrots, peas broccoli and cauliflower some teeny yorkshires found in freezer, and loads of thick and tasty ‘proper’ gravy to help it down, took a while, but boy was it wprth it! followed, albeit an hour later by fresh strawberries and some clotted cream ice cream. Well, thought as bloods had been good, could splash out.

Monday 10th - Singapore noodles tonight Hong Kong style - fortunately I can get all the authentic ingredients although don’t quite have the skills of HK chefs!

Today we are having our favourite. Chicken Penicilian with Mash Potatoes.
