What are you having for lunch/dinner? (Part 1)

Too warm to eat much today - so no breakfast - just had strawberries and yoghurt at lunch-time. Tonight when it has gone cooler I will have a chicken/ham/mushroom/olive/onion pizza - home made with a salad. Then an ice cool San Miguel Fresca (beer).

Probably nothing tonight …My new sandwich maker with the detachable easy clean Non stick plates which has only been used 6 times has done this …and yes we did oil the grill plates first and buttered the bread …Its going back …lol

Rena darlin’ was over 27oC in my lounge yesterday afternoon - still cooked and ate Steak & Kidney pudding, mash and peas at lunchtime. Very little affects my appetite for food, irrespective of the temperature.

Today for lunch I’m cooking salmon/creme fraiche/dill filo pastry parcels, with minted new potatoes and mange tout, followed by a chilled mix of stewed apple/plum/loganberries…yum yum…:smiley:

Barry, if you have a surfeit of plums, place them in a saucepan, cover them with water, add some sugar and heat gentlyn till sugar has dissolved. remove from heat and allow to cool. Remove from saucepan and slice in half. Remove stones and place in a shallow oven-proof dish (a pyrex dish is perfect). make victoria sponge mixture, add almond essence to mixture. add a small amount of sugar syrup to plums. Pour/scrape sponge mixture over the plums. decorate top with almond flakes and place in a warm (180oC) oven for approx 25 - 35 mins. When cooked thoroughly remove from oven and allow to cool. Sieve icing sugar over it to decorate. Serve (slightly) warm with custard.

Kitty darlin’ I bought a half-shoulder of Pork yesterday with a 3 litre bottle of cider. Last night I placed ppork joint in my slow cooker and poured about 3/4 pt over the pork and switched on. The smell emanating from my kitchen this morning is delicious. Shortly I’ll remove the skin from the pork, rub it with salt and place it in a roasting tin with the potatoes, parsnip and onion to make crackling. Lunch will be around 13.00 - wanna come???

Picnic lunch planned with my siblings and Mom in the park: fresh rye bread from the bakery and a variety of deli meats for sandwiches, garlic dill pickles, caesar salad, potato salad and whatever else we think to bring. It’s a short walk to get ice cream sundaes from there so that’s the plan for dessert. :slight_smile:

Update: (See post #2029 on previous page). Pork joint cooked all Saturday night. On Sunday morning I removed joint from slow cooker, poured cider and pork juices into a saucepan, removed the skin from the pork and placed that in a roasting tin after rubbing down with salt. Returned joint to slow cooker, added a small quantity of the juices back over the pork. Peeled and chopped potatoes, parsnip and onion and added them to roasting tin with pork skin and cooked them in the oven.

Sunday lunchtime had enough pork joint on my plate together with a large piece of ‘crackling’ roast potatoes, parsnip and onion as well as other steamed veg and gravy I made from the meat juices. IT WAS DELICIOUS!!! I have enough meat from the joint to make several more meals too.

We have sausages today…haven’t had them for a long time.
Might do mash and onions with them, or a stir fry.

Off out for lunch and going on 80 mile round trip for spuds and home produced meat. Mmmmm lovely!!

Ham and chips tonight, easy tea,also may indulge on an Ice cream, Sainsbury’s do a small one and its lovely.Madam was sulking yesterday as she was out too early for her Breakfast and wouldnt eat it when we got home, at tea time she refused to eat her Dinner as well she just sat and pulled faces all night at us. Cavs are the most insufferable dogs at times. today she is back to normal thank God.

Chinese stir-fry Pork (from the remains of Sunday roast), stir-fry Veg and noodles with a sweet and sour sauce. Since my oven is free, will make yet another bread pudding and eat some of that warm with some custard.
