The healthy eating challenge!

Yes, it’s on offer at £1 so bought a couple.

Your food sounds nice. I’ve run out of yoghurt, but had a couple of those mini scotch pancake things earlier with my morning tea.

I have a lot of smoked mackerel to use up, so will have a salad at lunch time, with maybe a poached egg.

Dinner I will heat the mackerel and have with roasted courgettes, peppers tomatoes, and new potatoes.

So far today, a smoked mackerel wrap, with lettuce, a little mustard mayonnaise.
Had wine last night, so going easy on calories.
I’ll probably have roast Mediterranean veg, with the remaining fillet later.

2 slices of buttered toast. Tea.
Homemade Chicken Curry and Rice.

Noodles lunch time as missed breakfast, not particularly healthy, then Seabass, courgettes and potatoes later, with yoghurt and fruit maybe.

It’s sometimes hard deciding what to eat for the evening meal, especially if the others filling. Sounds nice, got some chickpeas soaking, which I’ll boil and use in a leftover chicken curry later this week. Mine might be from a jar, but I’ll add store cupboard stuff, fresh onions, garlic, and spices to jazz up.

Chickpeas are healthy Teacup so is Lentils, I sometimes put Red Lentils in my Curry.

Today, its a normal Sunday Roast.

Chicken, Pots. Carrots, Fines Beans, gravy.

I’m debating a roast, but it’s just two of us here today. Unsure whether it’ll be worth it. Might just have a salad with my roast chicken, with boiled potatoes.

I also have some fish that needs using up again, so maybe I’ll do tomorrow.

Today:

Toast. Tea.
Vegetable Pasta Bolognaise.
Rye Crackers and Cheese.

Porridge, 2 prunes.
Jewish Chicken Penicilian and Mash.

Dinner chicken and chickpea curry, using a jar of masala paste, onion, garlic, ginger, garam masala, paprika, etc, plus chopped and fresh tomatoes. Out of coconut cream as would have added some. Hopefully there was enough in the paste.
Have some slightly wilting fresh coriander which will add to the Crockpot just before serving.

Not feeling very hungry today, but I often skip breakfast Just had endless cups of tea, but looking forward to food tonight! Yesterday had food fairly late roast chicken, with couscous and sweetcorn.

Your chicken Penicillin sounds interesting, I thought it was just a name for soup? Love chicken and mash!

Cereal with oat milk

2 x teacakes for lunch

Chicken kebabs on a stick, with cauliflower rice & kidney beans.

Toast.
Gammon, New Potatoes, Broccoli.
Sandwich.

Yoghurt with nutty, seeded granola.

Lunch, omelette.

Dinner, leftover curry with rice.

Nice and easy.

Dinner - undecided. Probably fish with something.

Tonight, I shall be mostly eating Chicken Madras (Tesco curry sauce) and rice. Not sure if it’s healthy but the chicken is protein and the rice is kind of easy on the digestion, so I read. The sauce could be a different matter. :slight_smile:

The carbs are in the rice, but there are good carbs, although am guilty of eating white processed rice, as it takes ages to cook otherwise.

Brunch, jacket potato with sweetcorn and a little mayo

Dinner curry remnants. I hate waste. I can honestly eat the same thing for days in a row!

I may have frozen fruit with yoghurt as a snack at some point.

So today I have had a home made latte, a banana, a sandwich with mature cheddar, chorizo, cucumber and tomatoes and some light mayo. A can of diet coke.

Evening meal has been fried potatoes, sliced whole avocado, sliced baby plum tomatoes and tuna.

Desperately need to go back to healthier eating!

Also giving up alcohol. The problem with all this socialising post lockdown is that the prosecco and wine comes out and you can end up drinking an awful lot more than usual.
