My homemade mincemeat is doing well
I have not tasted it as yet, my track record for tasting is very bad

I’ve got tons of jars of it when they used to be reduced in price or on offer, but not for years now and it keeps very well un opened. :slightly_smiling_face:

One is missing already
but nothing has been said as yet!
I did not have any double cream so ended up making a buttercream with icing sugar and butter plus some single cream but milk can be used of course
dessert chocolate which I now melt fine in the microwave for the top coating
Choux Pastry is so light that I could easily eat 2

I wouldn’t dare to make any of them, I would eat them all and think about it afterwards. I ate a large bar of chocolate once, didn’t feel sick but very guilty.

I made this butterless sponge cake this morning for my son and his work colleagues, as he is leaving the business.

It’s the most light and airy sponge I have ever made ,absolutely delicious,I’ve been told, when I’ve made them before.

If anyone is interested, it’s a recipe from “ yum it” butterless sponge ,YouTube.

Just made this coffee and walnut cake for a friend
yeah right,:joy:, I know!!..it’s not healthy!..a little bit of what you fancy in moderation,my personal trainer told me some years back.

I will give some to,Janice and Rita, the rest I will freeze.

If anyone is interested it’s a Nigella Lawson recipe.

The frosting is an American frosting, they are much nicer imo.:+1:

The Americans are darn good at cake/ sponge baking
and their frostings are so yummy!!.

I can see that in one of my coffee shops I visit,
wouldn’t last five minutes.
I always make mine with butter, my friend makes hers with margarine, I find it tastes really heavy and dense.

Is that butter icing ,with yellow colouring?..

My sons fav cake, is Chocolate with a ganache filling and topping

I have always used Stork block margarine, like my mum and granny before me!

But since they made it vegan recently, it’s not as good, so I’ve switched to butter

Yes, it’s lemon butter icing, with real lemon juice, lemon essence and a spoonful of lemon curd

A neighbour - who was emptying his 'fridge prior to going on holiday - gave me a packet of ready made filo pastry. Not something I have ever used before - so I rummaged on the 'net (as you do) and found these little beauties. Too hot to bake during the day - made them around silly’o’clock in the morning yesterday and they are truly delicious! One major problem though - if left for too long they develope a case of the ‘soggy bottoms’ ! Shared them out with neighbours.
