Im getting ready to make my carrott and coriander soup–I bought some red lentils–not sure if I will use them, but i have plent of carrotts and red peppers–plus of course some coriander–Ill let you know how it is later…

My next soup is going to be mixed vegetables.

Having a roast dinner today.

Having Beef Casserole today.

I found these new high-fiber, low-carb wraps that are actually pretty good. Usually I don’t like low carb wraps/tortillas because I can’t stand the texture, it’s like eating a sponge. But these were good. The downside? They’re expensive. They’re $5.49 (£4.43) for only 6 of them. That’s a little too pricey for me to be buying them on a regular basis when the regular wraps I buy are about half the cost.

But still, I did something different with them last night. First off I made some cilantro-lime rice, which was really delicious. I put that in the wrap along with sauteed onions and bell peppers (both green and orange) and drizzled it all with a tablespoon of Mexican table cream. So it was pretty tasty. Might do the same for tonight’s dinner. I think thin-sliced steak would be good with that as well, sort of like a steak fajita all wrapped up.

I have made a mixed vegetable soup for tonight for supper.

That sounds good to me too—its ages since I had a wrap—the soup was good and tasty–but not quite the same as in cafe nero—but I know it was full of good things-thats the difference…
tonight–scrambled egg with salmon and grilled tomatoes…

My next soup, I think might be Spicy Butternut Squash.

Today its Lambs Liver, Mash and Peas.

I love butternut squash soup. Wouldn’t like it spicy, though.

Yesterday I visited the meat counter and had the man slice me thin a very beautiful sirloin steak (also snagged 2 lobster tails that were on sale) and I used some of the steak in my wrap last night with the cilantro rice and sauteed peppers & onions. Today for lunch I’m having the rest of the steak strips, barely cooked (I like it medium-rare, more rare than medium) and mashed potatoes that are leftover from another meal.

Back to Salmon Salad today.

Have made two Shepherd’s Pies today and have put them in the Freezer.

No idea what I’m having today. Haven’t even thought about it yet.

Making Sausage Stew today.

I need to weigh myself again soon, but I keep forgetting to. Then by the time I remember, I’m already fully dressed and don’t feel like undressing again just to get on the scale.

Oh well. Maybe tomorrow I’ll remember.

Today for lunch I’m keeping it very light because since it’s Friday, we usually have pizza or subs or some such. I’ll probably just make my own pizza out of pita bread with mushrooms, onions and green peppers. Far less fat and calories than ordered pizza.

been missing for a few days–just a busy time for me—still trying to eat sensibly–tonight I had some of my home made soup from last week–added extra veg–piping hot—perfect !!!

There is absolutely nothing better than homemade soup. I love making homemade vegetable soup and I don’t even follow a specific recipe, I just saute up some onions and garlic in a little olive oil, then just start tossing in whatever I have on hand. Fresh carrots and celery usually always, then whatever I’ve got hanging around, sometimes canned veg, sometimes frozen, sometimes fresh or sometimes a mixture of all 3. But regardless of what else I use, corn is a must. I love corn and put it in not only homemade soups, but I toss a handful into canned soups as well.

Finally remembered to weigh myself. Still down 1 stone, 6 pounds. It’s so funny with me, because the scale will drop, then I’ll stay at that weight for a while before the scale drops again. It’s like my body is saying, “Whoa! Okay, that’s good for now, we’ll just stay here for a bit.”

everyone is different Linda—you are still doing well. ! I am like you–see what is in the fridge or freezer and make a tasty soup out of it…

Sometimes those are the best soups, the ones you brainstorm at the last minute. Leftover zucchini? Chuck it in. Cabbage that’s been sitting around too long but you don’t want to throw out? Chuck it in. Oooo, a half pack of mushrooms that I’d forgotten about. That goes in too.

Then sometimes I have an overstock of canned vegetables, so I’ll bust open tins of beans (like lima or pinto), corn, peas, green beans, etc, and I always add a tin of stewed tomatoes. But even with soup made from canned vegetables, I always toss in fresh celery and onions.

I also love homemade chicken noodle. Comfort food at its best.

What all did you put in your soup this time?

I put in onions, roasted red peppers, carrots,. peas, sweet corn, coriander, celery—vegetable stock
