Sounds nice–i feel like having something different–just not sure what !
I’m saving a little calorie room for a favorite of mine… a BLT with turkey (essentially a turkey club) on ciabatta bread. That and light soup - chicken rotini with vegetables. That’s supper tonight and I’m looking forward to it.
Today we are havi:
Marinated Chicken Breasts in Indian spices with Salad.
they both sound really delicious—im still not sure–just stck on crispbreads and cottage cheese right now…
I’m having homemade Shepherd’s Pie and Vegetables today.
i think i need to check exactly what i have in my freezer–i need a change…
Today for lunch I’m having baked salmon in a light garlic-butter sauce and this new thing I found in the frozen vegetables section. It’s this stuff here, thought it sounded good…
The grains in there are whole grain bulgar wheat and whole grain tomato acini di pepe.
That looks good Linda.
I’m having problems in what to eat for supper about 7pm, we have our main dinner at lunchtime. I don’t want to start cooking again in the evening, and I don’t like Cottage Cheese etc.
Any ideas?
Well, the first thing that comes to mind is a slow cooker. You can toss all your ingredients into it and set it and forget it until suppertime. You could look for light & healthy recipes that you slow cook, then portion out and save them for meals for the week or even freeze for future use. Sometimes I’ll make a pot of homemade vegetable soup and eat it the rest of the week. Sometimes I’ll have the soup by itself and sometimes I’ll have a side with it.
Another thing you could do is search recipe sites for quick and easy suppers or make-ahead suppers that you can just toss into the oven or throw on the stove when you’re ready to eat.
Sandwiches and wraps also make nice, quick suppers that you could pair with soup or salad.
Here are some quick and healthy snacks/light meals that are 250 calories or less.

that looks perfect—not seen it in my supermarket…
I just had home made tomato soup–from my freezer–with extra chopped veg–tonight im having quorn chicken style pieces–maybe in a kind of curry sauce with rice and veg.
Thanks Linda, I don’t have a Slow Cooker. Bread and Rolls i’m fed up with, I will just have to look on the Internet for supper ideas.
It’s pretty tasty. Very low in fat and high in fiber and protein. I like buying the steamer blends. They’re great for a side dish or as a quick lunch all by itself.
That’s your best bet.
I don’t eat a whole lot of regular bread, but tortillas are a staple that I always keep around because I’ll wrap just about anything up in them. I love wraps!
Just I do sometimes make wraps.
I even put salad in wraps. I make a Greek-type wrap once in a while. I mix together chopped romaine lettuce, chopped tomato, feta cheese crumbles, onion, sliced black olives and a little bit of Greek salad dressing. Wrap it up in a tortilla and I’ve got myself a handheld salad, haha.
I love wraps too–you can put anything in them–quite a while since i have had on though…
I made a yummy one last night. I spread reduced-fat garden vegetable cream cheese on it, then added a slice of deli turkey, a slice of deli ham, a piece of cooked crumbled bacon (I know, I know, lots of yummy nitrates and sodium, lol) finely diced onion, finely diced red and green sweet pepper and lettuce. That one I wrapped up tight and cut into pinwheels.
Think tonight I might make me one of these…
Fish!
Thanks Linda, good ideas.
You’re welcome
Did you find any yummy recipes for quick suppers?
And oh yeah, real quick, another favorite of mine - crab salad wraps (using imitation crab).
Think that will have to be tomorrow night’s supper.
