Sitting by my bedroom window with it firmly closed. Quite a chilly draught today and plenty of grey clouds up above.

I shall no doubt potter about indoors, with the odd dog walk thrown in (wonder if I’ll need a warm coat?). And will switch on the PC, to sort out something to submit for writing group tomorrow, and I have a lot of spam emails to delete.

There will also be another roast meal, to use up the pork slices.

I am happy about the cooler weather - my early walk was so refreshing.

It is Monday - so it must be housework day in Tabby Towers. The laundry goblins are hovering in the kitchen and there are dust bunnies having a protest meeting in the hall - but they will all have to wait - I am brewing another pot of tea and toasting a couple of crumpets before I do anything else!

Good morning all, dog walked and the Tesco run completed, now having a brew before doing the veg for our chicken roast lunch. After lunch I’ll then be turning the left over chicken, with the addition of leeks and mushrooms in a white sauce, into a couple of pies which will make sixteen portions for the freezer, what good value a chicken still is…

Morning all,

It looks very promising out there, lovely blue sky and bright sunshine.

I experimented yesterday with some egg and toast ‘cups’. I lined a muffin tin with sliced bread, flattened with a rolling pin, then brushed with melted butter and baked in the oven for about 5 minutes. Then grated cheese into each one, and poured beaten egg over, back into oven for about 12 minutes. The idea was a result of trying to think of easy things for my daughter to put in my granddaughter’s packed lunch box - she’s going into year 3, and will no longer get free school meals. She’s a fussy eater, and vegetarian, so it’s going to be a bit of a headache for my daughter! Anyway, the experiment was a great success, so I shall take them round and see if she likes them - if so I’ll make some more and freeze for later.

@swimfeeders so sorry you’re still incarcerated, but how lovely that someone’s loaned you a tablet. That will ease the boredom enormously!

I always make my own Swimmy, it costs next to nothing and takes but minutes to do. Next time you’re in the area pop in and you can sample some, see what you think… :wink:

Barry, any chance of a quick guide on how you make that white sauce?

I would imagine once the leeks and mushrooms have been added it bulks up the filling. Don’t arf sound tasty. I usually buy the pies in Morrisons (chicken in creamy sauce, chicken in gravy, steak and ale etc.,) but they have really increased the prices, so looks like I will try making some myself.

A wonderful overcast start to the day. Autumn cannot come quick enough for me.

Clothes already in the dryer and breakfast: buckwheat and teff porridge with a beetroot smoothie, a few blueberries, almond cream (soaked and blended raw almonds),and a large helping of peanut butter with a few flakes for crunch. Perfect for the chilly start this morning.

My daughter who is also a veggie makes these in a similar fashion.

She uses spring onion, olives, finely chopped gherkins and tomato. She leaves it in the oven for approximately 10-15 minutes. They are quite large and she usually only eats one but they last for a few days in the fridge - if they haven’t been eaten.

She uses the silicon muffin cases which means they simply slide out and retain their shape.
This picture is from the internet (I haven’t taken any photos of her muffins yet) but it’s the perfect example of what they look like.

If you do Barry, make sure you use fresh bread - I used up a couple of 2 day old slices which were nowhere near as easy to roll flat as the two fresh slices!

I so wanted to add peppers, courgettes, tomatoes and onions - cheese and egg seemed so bland! But my granddaughter is such a fusspot, she wouldn’t eat any of those things. It is so frustrating, and so limiting. If she likes these, then I’ll make some more with some chopped quorn ham, and I’ll mince some onion and courgette - she doesn’t seem to mind them like that, but hates the ‘slimey’ texture of larger pieces.

Good morning all :slightly_smiling_face: a lot cooler today and quite refreshing after the hot days of late.

We have had a lovely weekend with our family, a steak BBQ on our SIL’s birthday, catching up on all the news and generally forgetting all the bad happenings of the past 2-3 years.
It was quite a tonic!

Today will be a quiet, relaxing day. :slightly_smiling_face:
