I like very hot food in general, and if its curry then madras chilli heat is my usual but quite often vindaloo.
I get why people say the heat masks the taste, but for a chilli lover like me it enhances the taste and sensory experience

I’m of Indian descent hence almost every Indian dish that I prepare has a certain level of spicy. I prefer aromatic curries to very spicy dishes though. Overall, curries in my home aren’t extremely hot. I feel too much heat takes away from the flavour.

In answer to the question, I think the spiciest I have ever tried is cayenne pepper (powder form)
I cook many ‘Indian’ dishes such as these;
First is seek kebabs which I serve with very finely mandolin sliced salad.
Second is a chicken tikka Ceylon.
I smoked marinated chicken then later added to the Ceylon.
In the UK we have BIR curries (British Indian Restaurant style) and traditional Indian / Bangladeshi/ Ceylon dishes.
I like cooking both styles depending on what I fancy.
I like spicy very much, have yet to have anything that was too spicy. Indian used to be my favourite when I lived in the UK (Vindaloo everytime).
I still have Indian occasionally but for the past couple of decades Thai has been my favourite go to food.
(Mind you there is nothing like a good rare or medium rare steak)
We have a Thai daughter-in-law and I am treated to Thai dishes every now and then. The curries can be hot but not always. I once bit into a chilli pepper in one of the dishes. Don’t know what it was but it was so hot that it was difficult to hide the discomfort.
When it comes to Indian curries, I like Vindaloo or Madras. Also developed quite a liking for Rezala lately. Chicken Tikka for a starter every time. Not hot but tasty.
