You’re not going on about Venision again UJ?
We are having Roast Lamb, Roast Potatoes, Roast Parsnips, Dark Cabbage, Swede and Gravy.
Susie darlin’ - sounds lovely, but might I suggest an alternative recipe for the lamb. Place joint in roasting tin. Pour 1/2 Pt orange juice over lamb, add 3 Tblsps Soy Sauce,3 Tblsps Worcester sauce, 2 Tblsps Apricot jam, 4-5 cloves of garlic (crushed) and 2 Tsps dried rosemary. Baste fairly frequently to stop joint from drying out. When ready to cook, strain from marinade, and place in another roasting tin and ‘dry’ roast for aprox 35 - 40 mins. Remove from oven and strain off any excess ‘fat’. Pour marinade over lamb and return to oven. Continue to cook, basting lamb in marinade at frequent intervals until lamb is cooked through. Remove from oven and allow to ‘rest’. Pour marinade into saucepan, add ‘lamb’ oxo cube and 1 Tsp cornflour (to thicken), stir vigously whilst heating on hob. Serve with roast potatoes, parsnips, carrots and onion. Truly delicious!!!
I over did the sherry trifle yesterday so I plan somerthing simple
PUt the contents of a tin of butter beans, drained in to a frying pan ,laced with Olive oil. Add loads of garlic & chopped flat leaf parsley and cook until butter beans are golden. Serve.
It’s quite nice if you put the beans in a third of a tin at a time, cos then some of the beans are crunchy and some softer. It’s all good,
I sometimes add tuna at the end. They do this in Normandy with a salad
mmmm Uncle Joe that sounds delicious, I do have to watch my Diabetes though.
Me too Susie darlin’ - ‘but a little of what you fancy …’
I am having chicken with mashed cauli, savoy cabbage and mushrooms with a roast carrot. Yummy!
Steak & kidney pie, creamed potatoes and whatever veges I fancy cooking.
Tonight we are having Chicken quarters cooked in red wine sauce with sliced mushrooms, leeks, peppers with brocalli and potatoes.
If I set off now I can be there by dinner ;-)![]()
Low carb sausages, cauli mash, cabbage and whatever other veg I fancy.
Friday, fish, so tonite 'tis smoked haddock (cooked in micro - one of the few things I use it for) really creamy mashed pots, and teeny tiny petit pois with a dollop of lurpack’s newest olive oil based spreadable butter. Can feel my mouth watering already.
Beat you to it DM - battered Haddock, pile of oven chips.
Saturday, Chicken Gougons, with oven cubed potatoes, sliced leeks, sliced mushrooms, sliced peppers, mixed herbs, salt & pepper.
Turkey soup/stew with lots of herbs and veg.
Out for a meal, so don’t know yet.
I have just noticed I have gained a bit of weight lately, not much. Has anyone any ideas of what healthy snack can I have at night while watching my soaps? I am on raw vegetables at the moment, but I am getting a bit fed up with that.
Indian take-away today - Chicken Tikka, some rice, some veg. curry and a garlic nann.
Susie darlin’ - eating snacks whilst watching television is not a good idea. Providing you’ve had a sufficiently large meal at tea time (either sandwiches or your main meal) you shouldn’t feel hungry again to the point of wanting more food till breakfast the following day. However, if you need to ‘munch’ instead of raw veg, what about some fruit??? an apple, orange or pear f’r instance???
Bought a small turkey crown in the week, defrosted and cooked in my slow cooker last night and will now peel, chop and roast potatoes, parsnips and carrots with an onion and make gravy from the juices of the turkey. For ‘pudding’ will smother a couple of mince pies in custard and eat them.
