Time- when to know too much to add to a plate?

is there such a thing as too much to add on a plate? As a super late bloomer who took a long time to graduate undergrad, I feel like I have a lot I need to take care of even in my older self now. How many people still work on long term goals and is it normal to feel like time is running short in the 55-60 range to get things done still?
