Prawns with lemon rice

Prawns with lemon rice. There is no green salad because the shops are empty:-(

I felt like a Rose’. Might has well promote Cape wines. Saturday is officially over.

Lemon Rice

Ingredients:
1 cup rice (boiled in salted water together with 1 teaspoon turmeric powder)
1 medium white onion (finely diced)
1 teaspoon ground garlic
½ cup carrots (cubed)
½ cup peas
½ cup sweetcorn
½ cup green beans chopped

Salt to taste
½ teaspoon freshly ground black pepper
4 tablespoons butter
½ bunch coriander(chopped)
Juice of 1 small lemon

METHOD:
Rice must be cooked through but firm. Drain and set aside.

Sauté onions and garlic. Add the vegetables and spices and cook until vegetables done. (You may need to add a little water to help the cooking process.)
Add the rice and chopped coriander and the lemon juice to the pot and mix well. Serve with seafood or chicken dishes.

Lemon Butter Prawns

1 kg large prawns, peeled and deveined
150g butter
250ml fresh cream
2 tablespoons lemon
1 teaspoon peri-peri seasoning
1 teaspoon seafood rub
1 teaspoon garlic pepper
1 tablespoon fresh coriander, chopped
1-2 chillies, chopped (put the chilli down and step away from the chilli if you can’t handle heat)

Sauce:
Melt half of the butter, and add the rest of the ingredients, except the prawns.
Braise on meduim heat till mixture thickens slightly. Set aside

Prawns:
Cook prawns in remaining butter until done.
Add sauce to prawns and cook for a further 3-5 minutes. Serve with lemon rice and a green salad!

Enjoy with your favourite glass of wine because life’s too short!

Personally I hate cooking for one. I either bulk produce stuff and freeze it to have with rice or pasta later or I eat out

My objection is the 25 minutes to prepare it, two minutes to eat it, 10 minutes to wash up afterwards. Funny thing is just cooking for one other person makes all the difference.

The only thing that has made me slightly revise my thinking is my recently purchased air fryer. That is so convenient and easy to wash up, it has replaced my BBQ as my go to cooker.

I meant dinner for one as it was just me. My young adult son lives with me and he made short work of it but he is pretty much on his own schedule. So we hardly ever share meals.

My air fryer is my absolute best kitchen appliance! :slight_smile:
