Hi Mariana.

Today I am making a Lasagna but with Turkey Mince.

I love seafood lasagna. Have you ever had that? It’s wonderful stuff. I haven’t made it in a long time because it’s pretty calorific.

Today my boss wants to order our favorite veggie pizza from our favorite pizza place, so I’ll have a few pieces of that. I usually get salad as well, but I’m not in the mood for salad today.

I’ve heard of it Linda, but not tried it, i’m not a lover of seafood or Crab and Squid I like.

I’m kind of a seafood fanatic, squid included!

That reminds me, I have a whole bag of frozen squid rings. Need to turn those babies into some calamari sometime soon. I also love calamari salad.

Yes I like Calamari if its cooked right.

Today we are having:-

Chicken breasts wrapped in bacon with BQ Sauce and Vegs.

Oh wow, the chicken sounds good. I love wrapped chicken (or any meat, really) in bacon because the fat from the bacon makes the meat nice and moist and delicious.

I think today for lunch I’m going to make calamari and spinach salad, since I’ve been talking about it and I’ve got some in there I need to use up. Well, some of it, at least. It’s a pretty big bag. But what I usually do is saute the squid rings in minced garlic and a little bit of soy or Worcestershire sauce and add it to a bed of fresh baby spinach while it’s still warm. And to that salad, my favorite things to add are diced carrots, diced hard boiled egg, crumbled cooked bacon, diced tomatoes and sliced red onion. It’s so good. Sometimes I don’t even use dressing because the warm, sauteed calamari is dumped onto the salad along with the juices of whatever I sauteed it in.

I’m picking up the ingredients to make shrimp and grits today. Have a nice recipe I found that I’d like to try and I’ve never had shrimp and grits and have always wanted to try it.

What is Grits?

Grits are typically eaten as a hot cereal for breakfast, although they can be eaten at any time for any meal, such as shrimp and grits. Grits are made from corn that is ground into coarse meal. Kind of like mush and polenta. It can also be made from hominy. Shrimp and grits is a traditional southern-American dish. I love a bowl of hot grits with butter. Some people like it sweet, using maple syrup instead. It’s actually made many ways.

Ah looks like Porridge.

We are having Lambs Liver today.

Yes, exactly. Corn porridge. Here in the states we call it grits. Oat porridge we call, simply, oatmeal. Rice porridge is cream of rice. Wheat porridge is cream of wheat, etc. I love them all. Cream of wheat has been a favorite of mine since I was a kid. I also love hot cream of oat bran. A bowl of hot cereal is one of my favorite things. But I make them all, including oat porridge, with milk instead of water. I can’t imagine making any porridge with water. It’s so much better, richer and creamier made with milk. It’s even better with half & half, which is half milk and half cream. I occasionally see people making these hot cereals with water and it makes me cringe, LOL

Today I’m fixing actual fried calamari with the rest of my squid rings. I’m going to take a shot at that shrimp and grits recipe as well. I’ll have to scale it to one serving because although my son will help me eat the calamari, I doubt he’d touch the shrimp and grits.

Are the steroids giving you problems? I know whenever I take a course of prednisone - which I sometimes have to do when I get bad outbreaks of eczema - it can cause problems because steroids suppress your immune system. This last time I ended up with a UTI and had to take antibiotics. When your immune system is suppressed, it allows all the bad bacterias to come out of hiding and have parties, i.e. wreaking their havoc on your body.

Smoked Haddock, Boiled Potatoes, Broccoli Cheese & Carrots.

Having fresh Plaice today for lunch.

Had to look up what that was, as I’d never heard of it before. That’s one weird looking fish. Of course no weirder than one of my favorite fishes, which is Monkfish. Now that’s one ugly creature, lol.

Plaice is a Flat Fish and quite thin, so only took 5 mins. to cook.

Is it super good? I don’t care for thin fillets.
