Odd thought experiment.
The refuse collectors could be replaced faster since that job doesn’t take that long to learn, so I don’t think people would miss them unless no one stepped up to do that job.
The tennis stars would take many years to replace since it’s a skill mastered over a long time, for some since they were very young. If you’re a fan of the sport, having a skilled master to look up to might be something people would miss.
If you’re asking which one could we do without entirely, that’s just asking whether we can do without functional services or entertainment. If that’s the case, we could also do without art, movies, television, the internet and sports. I think both functional services and entertainment are important.
The undue importance has to do with money and how people are compensated and how money is over-valued, not how important the people are. Top tennis players make a lot of money because of how much revenue they generate.
