Here’s the basic raw ingredients beetroot, onion, carrot and apple.
Here’s the ingredients all prepped and ready to cook, with the addition of a tin of chopped tomatoes, some vegetable stock and red lentils as a thickener.
Love beetroot soup. Bit of soured cream in it - perfect.
But I often par cook the beetroot, cut into chunks. Then freeze them in half kilo portions. They roast very well straight from frozen. Add to other veg like squash and fennel for perfect veg to go with a sunday roast.
I like beetroot in most forms other than in vinegar. My preference is raw on salads, with roasted with other root vegetables in second favourite place.
Thanks Ripple it was. I used to make beetroot chutney as well with the glut but thought that I’d have a change this year, although having said that there well be another glut later on so who knows…
