My new recipe for vegetable soup

3 Large Onions
4 yellow Capsicums
1 kg Parsnips

Saute above for 20 minutes in Olive Oil in a 6 litre pot.
Add 1 Litre Vegetable Stock
2 kg pumpkin puree
1 cup each of dried split peas and lentils (1 cup before soaking) - pre soaked
Simmer further 20 minutes

Add
1 Tbspsp Garlic
2 Tbsp Keens Curry
2 Tbsp Worchestershire Sauce
Mix the above together to form a paste, add to soup.

2 tins chopped tomatoes
1 1/2 litres boiling water
Simmer further 30 minutes
Puree all

A couple of soup serving tips (if I may):

It might taste nice but probably looks a bit, erm, dull. How about dicing up a red Capsicum and throwing that in right at the end? and do you have fresh coriander leaves there in Perth? Tear in half and throw in bowl.

How about a drizzle of olive oil in the bowl, over the top?

I like things to look nice, and it’s not just for looks.
