I like the idea of meatloaf, tried it before, a long time ago, tried it again today …
1/2 kilo of beef & pork mince from a reliable source
2 garlic gloves crushed chopped
Ginger grated
1 big potato, 1 big carrot grated
1 red pepper finely chopped
1 slice of malted farmhouse finely chopped
coriander leaves chopped
2 eggs folded in
Placed on parchment on a baking tray, shaped loaf-like
Baked for an hour & a bit.
It tasted OK, didn’t bind well, fell apart, and was inseparable from the parchment.
Line a loaf tin with baking paper (screwed up and then smoothed out first)
Fill with your mixture , flatten the top and bake.
When cool turn upside down and carefully remove the paper…voila!
My favourite recipe is this one from Waitrose I always do to have cold on Boxing Day (with other things!)
I’ve been watching YT recipes/methods where they say don’t bother with a loaf tin, just shape it by hand on baking paper on a flat tray. But mine got seriously stuck. I guess screwing up the paper might make a difference. And there must be something in the ingredients I used that oozes stickiness.
