Ok, so I am looking for a really good fajita spice mix that has that real authentic taste. Ideally no tabasco sauce.
It seems that it should be simple but there are quite a few variations out there and the recipe I used last night was tasty but didn’t quite hit the spicy-sweet spot.
Yesterday’s spice mix (from the BBC’s easy fajita recipe but I didn’t have any tabasco sauce… ):
For the marinade
1 heaped tbsp smoked paprika
1 tbsp ground coriander
pinch of ground cumin
2 medium garlic cloves, crushed
4 tbsp olive oil
1 lime, juiced
4-5 drops Tabasco
This is one that I have found today :
FAJITA SEASONING
1 1/2 teaspoons ancho chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Note that there is a lack of coriander and tabasco
The BBC recipe was ok but maybe would have been great with Tabasco - or is that a no-no for Fajita purists?
