Easy Celery Soup

Celery soup

1 x head of celery (complete with leaves)
1 x large onion
6 x cloves of Garlic (Italian is best)
1 x Vegetable stock cube
Half pint semi skimmed milk (optional)
1 x teaspoon of sea salt
A lot of fresh ground black pepper.

Roughly chop the vegetables - put in a saucepan with just enough water to cover them. Bring quickly to the boil - add the stock cube, salt and pepper - stir thoroughly then reduce heat and simmer until vegetables are soft.

Allow to cool - then blend - either with a stick blender or, if a smoother texture is required, in a jug blender. Return to saucepan - add the milk - heat - and serve with homemade crusty bread.

That sounds really good although it does seem like quite a lot of garlic, but I will try that recipe next week thanks.
I love celery and I love soup.
