Another batch of Split Pea soup

Slightly different to my last batch
So simple.
Diced 4 large onions. 4 cloves garlic. Lightly fried in olive oil until softened.
2 carrots, 1 large zucchini, 2 cups chopped broccoli, 1 cup each frozen peas/beans.
2 cups of dried split peas, presoak peas 6-8 hours, add to mixture with 8 cups of boiling water, dash of salt/pepper.
3 Tbsp Worchestershire Sauce
Brought to the boil then simmered for 30 minutes.
Puree all.
Rather delicious.

I don’t think anyone will be able to follow that recipe as you measure everything in “cups” . Better if measures off in weights. A cup size could be anything. Even different sizes for different ingrediants

A cup is a standard measure in many parts of the World.

There are many conversion calculators on the Internet for cups to litres.

I used to be in charge of the Foodies, a 95% female bunch of Health Inspectors who did Food and Health and Safety Inspections and Enforcement.

An incredibly boring but essential job.

They spent most of their time in Catering Kitchens, from grotty Takeaways to Michelin Starred places and huge food factories.

They were excellent chefs with all the tips they picked up.

One such is this, don’t bother with very finely chopping garlic, ginger or chillies, buy them in frozen pellets, much cheaper and better chopped than anything you can do yourself.

You would be amazed at how many top Chefs use these.

Also amazing is how little food waste there is in a Commercial Kitchen compared with a domestic kitchen.

Vegetable peelings are full of flavour, and make amazingly tasteful stock, which can be concentrated and frozen.

The same applies to chicken bones and skin, just smash them before boiling.

You can break and then cook beef and lamb bones, for a more intense flavour, roast them first.

All good fun to get fantastic meals on a budget.

Two cups for me is a lot of broccoli as hate it , you do not find the broccoli taste over powering ?

Not with the rest of the ingredients, can not taste it.
Leave it out and add anther vegetable of your choosing. Pumpkin, Sweet Potato, celery, cabbage…
Curry powder can be added if it worries you. At least 3 Tbsp.

What made you add broccoli to begin with to add consistency so not runny ?

The thinness is solely determined by the amount of liquid added.

I’m going to make it this Thu but using cabbage as blinding hate for broccoli , lol but like pea soup .
