Every year like to bake a fruitcake for Christmas. I use the light fruitcake recipe from the cookbook Cooking in Colours by Tess Mallos.
I vary dried fruits to what is sold at grocery shop here in EU. Anyone else like baking fruitcake for the holidays?

Never buy or make cake for Christmas, it just wouldn’t get eaten. We are always far too full after the barbie.
After food we just sit about talking, watching the kids and dogs playing in the garden, swimming or playing board games.
I’ve not ever baked a Fruitcake, but I really like
eating a slice now and then, with some whipped
cream on top, or drizzled with a little caramel sauce.
