Every year like to bake a fruitcake for Christmas. I use the light fruitcake recipe from the cookbook Cooking in Colours by Tess Mallos.
I vary dried fruits to what is sold at grocery shop here in EU. Anyone else like baking fruitcake for the holidays?

My childhood Christmas memories are filled with the smell of baking sweet treats in the kitchen.
Fruitcake and Christmas pudding were two of the top items my mum and I would bake together, and it really takes me back.
The scents of mixed fruits, spices and those cherished recipes still linger in my mind.
I’ve kept those recipes for ages, and to this day, no one can beat my mum’s fruitcake and Christmas pudding—they were the absolute best!
Apologies for the state of my recipe book all stuck together after years of use and my teenage handwriting. I started compiling this recipe book in December 1990.

Never buy or make cake for Christmas, it just wouldn’t get eaten. We are always far too full after the barbie.
After food we just sit about talking, watching the kids and dogs playing in the garden, swimming or playing board games.

I’ve not ever baked a Fruitcake, but I really like
eating a slice now and then, with some whipped
cream on top, or drizzled with a little caramel sauce.
