Very often I will go to the site’s cookie settings and reject all but “necessary” cookies.
I often wonder - when I reject certain cookies does the site actually take any notice of my request or do they still leave those cookies active?
There is no way for the average person to check.

There is a way to check(and stop tracking) - use an anti- tracker addon like Ghostery
I have also set my browser to automatically delete all cookies on exit.

I don’t accept cookies while browsing. You can go into settings on your browser and delete all cookies but you might have issues with some sites when logging in. Some might not remember your history. It’s a pain but if you really want to know which cookies you have there’s a way to do it. Or you can get add ons that will tell you.
